Not sure what everyone does with their Thanksgiving left overs, but in my home, we have turkey salad, my turkey soup, which is on my blog.
This year we are also making relleno de papa or potato ball. We will be using up the left over turkey and mashed potatoes we had. You can fill this with what ever meat filling you like but traditionally this is filled with ground beef. The meat would be seasoned with spanish seasonings like Sazon, Adobo, Safrito with also put garlic and onion powder. Relleno’s are a Preto Rician street food and it is just so delicious.
This is my brunch today. Yes it is on a paper plate. I did not want to wash anymore dishes.
