Homemade Chicken Tortilla Soup

This is my version of Chicken Tortilla soup.  I reviewed several recipes and came up with what best fits my family.  I hope you try and enjoy. IMG_1179

Ingredients:

Tortilla Strips

10 small corn tortillas, cut into 1/4-inch wide strips

2 tablespoons olive oil

1 teaspoon kosher salt, or to taste

Soup

2 tablespoons olive oil

1 medium onion diced

4 garlic cloves, peeled and finely minced

4 cups low-sodium chicken broth

1 14.5-ounce cans diced tomatoes and juice (I used petite diced, no-salt- added)

1 15-ounce can black beans, drained and rinsed

2 or 3 cups shredded cooked chicken

1 1/2 cups corn (you can use frozen, can, or what you have on hand)

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoons cumin

1 1/4 teaspoons salt, or to taste

1 teaspoon smoked paprika or regular

1/4 teaspoon cayenne pepper, optional and to taste

1 tablespoon fresh cilantro leaves, finely minced

2 cups water

For Serving

diced avocado optional for serving

Directions:

Tortilla Strips –

Preheat oven to 375F, line a baking sheet with foil to save on cleanup time, loosely scatter the tortilla strips, drizzle with olive oil, kosher salt, and toss to coat evenly, and bake for about 15 minutes, or until crisp and lightly golden brown; set aside.

While strips are baking you can begin making the soup.

Using a Dutch oven or stockpot, add 2 tablespoons olive oil and heat over medium-high heat and add the onion, and garlic and sauté for about 5 minutes, or until begin to soften. Stirring frequently

Then add in the chicken broth, diced tomatoes with juice, drained black beans, chicken, corn, lime juice, chili powder, cumin, salt, smoked paprika, optional cayenne pepper, and bring to a boil.

Allow mixture to simmer for about 5 to 7 minutes.

Stir in cilantro and cook for a about 20 minutes until all flavors are incorporated.

Taste soup and adjust for seasonings

Serve with tortilla strips, avocado on top

Tuesday Morning

It’s 7:30am and I am at work ugg.  I don’t start work until 9am, but my husband has a client presentation and some of the higher-ups from the company will be there, so he needed some extra time to prepare.  I am not a fan of getting to work this early, because by the time 3pm rolls around (which is my peak time) I am tired and want to go home.  Right now I feel good and I am taking advantage of this time to blog some.  I know it has been some monthly since my last blog, but I am finding it very hard to keep up.  My work hours are very long and by the time I get home I do not want to be on a computer.

I might consider getting to work at this hour though because it does give me the time to blog, so maybe not such a bad thing huh.  I do plan on doing more blogging just might not be on a daily basis.  I have several new recipes, and I am also trying to put some cooking videos together to upload on my site.
