Plan With Me Week of July 10th thru July 16th

I am using a weekly kit that I made.  I recently just fell in love with the Sloth’s and had to make a weekly kit using them.  This is my first time making a planner kit and it did not turn out that bad.  I do have more learning and improvements to do, but I love this weekly layout.

What’s on My Mind

I often have to think about how will my children survive in this world we now live in. My husband and I have tried to raise our children not to judge other by color, race or religion, but in this world today that is all that is prevalent.

Growing up as “Generation X” makes me wonder how this world could change so much. It went from being family oriented and God-fearing to greed, hate and corruption. As a parent raising children how do I teach them now to avoid being like this world and be true to themselves when this world teaches the opposite?

Growing up I was taught to not see color and love thy neighbor. I was taught to be kind and respectful to others and my elders. You don’t see this today. Today you see our elderly being attached by today’s youth. Growing up men would hold the door open for a woman, but today they just slam the door on the woman.   I am not sure where the respect went or the kindness, but I keep asking myself will my children survive this world we live in now.

What changed from then to now? Did parents just give up teaching respect and manners to children?   Did families just stop being families due to both parents having to work? My children live in a household with both parents that work, and we still find the time and energy to keep our children respectful.

I see on a daily basis how this world is so cold. Everyday I see homeless people looking to find the next bit of food, but yet we have enough money and resources to go to the moon, create the next glamorous phone. Why can’t we just do what is needed among mankind?   Why would a child growing up in this world now want to help the next man? The only thing being taught now tis hat money is power and you are better than everyone else.

Growing up racism was very dominant. I’ve seen things that a child should not have seen. But as people today we say racism is not what it used to be. Racism is and even more so in today’s world.  Are we in denial? Do we not care to see what the truth is?   It makes me so sick to see the amount of hate we have for each other. Why does a person’s skin color matter? Why does the gender matter?   I fear for my family daily and have to pray that they will come home to me unharmed. Why do I have to do this??!!

I am from the “Generation X” and I am fighting to understand and wrap my brain around the why’s, of this world.   What is enough to a person? Do we really need to have million dollar homes, yachts, and what ever else comes with money?   Why is being greedy so much the “in” thing now? Why is hate the best word in our mouths?

Arroz con Gandules

This is my version of Arroz con Gandules.  I’ve been making this for over 10 years, and my family just loves it.  I learned how to cook Puerto Rican from my best friends growing up.  This is great with meat or just by itself.

 

Ingredients:

1 8oz can tomato sauce    IMG_1337

1 pk of sazon

4 cups Goya medium grain rice

1 tsp adobo

1 tsp garlic powder

1 tsp onion powder

3 to 4 tbsp safrito

1 can of gandules (drained)

water

salt

2 tbs oil

Steps:

Measure out the rice to how many cups you need to use and put into a bowl. (We use 4 cups in my house.)

Take out a pot large enough to cook your rice in. I use a Caldero (I think that is what its called) The picture of the pot it below.

Put the oil in the pot with a medium to high heat. You want the oil to be hot when you put the rice in.

Now add in the tomato sauce, gandules, all of the seasonings, and safrito. Let this cook for about 3 to4 minutes

While the oil, beans, and seasoning are heating you need to wash the rice. Run water into the bowl that has rice and move the rice around with the water running to clean it. Then drain as much of the water out of the rice and repeat about 3 or 4 times. You want the water in the rice to be as clear as possible.

Now with the clean rice put this into the pan with the oil beans, and seasoning.  The oil may pop so be careful when adding in the rice. Then add in water on top of the rice. You want enough water to cover the rice with about ½ inch over. Add about 1 teaspoon or so of salt on top of the rice. Mix the rice mixture well. Taste the liquid to see if you want to add more salt. (I don’t measure the salt I just know by site.)

Cook this on medium high heat until majority of the water has evaporated.

Once the water is evaporated lower heat to low and put a lid on it. Let this cook for about 30 minutes or until rice is tender.

Now its ready to serve

Lechon Dinner

My family just loves when I make lechon for dinner.  This is something I cook on Sunday’s because it takes most of the day to cook.  This is a low and slow type of recipe.  We have this will red rice and gandules or arroz con gandules.

1 lechon or picnic ham

Seasonings for the lechon

2 table spoons each of the following seasonings

Garlic powder     IMG_1204

Onion powder

adobo

Sazon complete

2 packs of Sazon

1 head of garlic

Pre-heat 250 degrees.

To prepare the lechon you will need to cut slits into the meat fairly deep so you can put cloves of garlic in each. Once that is done combine the remaining seasonings mixing them well, and rub the seasoning all over the meat.

Let the meat sit for a few hours to take in the flavors of the spices, but overnight is the best results for flavor.

Put lechon in a roasting pan and put in oven covered with lid or tinfoil for 7 to 8 hours. Check around 4 hours to see how it looks, but by the 7th hour it should start falling off the bone.

Once done take the lechon out and let rest for 10 minutes then eat. We eat this with red rice and gandules.

For the skin that is one the meat, cut this off and place on an aluminum lined sheet and place the skin on there and cook in over for 25 minutes at 350 degrees.   You will get some awesome chicharones.
