Bean Soup Slow Cooker

This is an oldie for me.  I grew up eating bean soup.  This is especially good with corn bread.

Ingredients:

1 medium onion

2 tsp. garlic powder

1 bag of great northern beans

1 ham bone (any left over ham will do)

4 cups water

2 cups chicken broth

 

Steps:

Wash beans under cool water and discard any beans that are broken.

Add beans to slow cooker along with the remaining ingredients.

Cook on Low for about 6 hours or until the beans are tender.

Remove about a 1-cup of bean and set aside.

Use an emulsion blender or blender and puree the remaining beans.

Add back in the cup of bean and mix well.

Serve when ready.

Serves 6 to 8 people
