My Version of Chicken Guisado

Hi guys, here is a recipe that I made my own.  I made this once in the past but had to re-do this recipe.  This is the Spanish version of stew and it is amazing.

Ingredients

1 can tomato sauce

3 cups water                                             IMG_3120

1 pk sazon

1 tsp garlic powder

1 tsp onion powder

1 or 2 tbsp green olives

4 tbsp safrito

1 can pinto beans

3 medium potatoes (cut into bit size pieces)

½ tsp dry cilantro

½ tsp oregano

½ tsp parsley

1 tsp adobo

1 pk of chicken tenders (cut into small pieces)

1 tbsp oil

salt and pepper to taste

Seasoning for the Chicken

½ tsp onion powder

½ tsp garlic powder

½ tsp adobo

Steps:

In a medium pan on med/high heat add in the oil and let it get hot. Then add in the cut up chicken and then season the chicken with onion powder, garlic powder and adobo. Let the chicken cook until no longer pink.

Now add in the safrito and stir well into the chicken. Let this cook for 2 minutes and then add in the tomato sauce and stir well.

Now add in the potatoes, water, pinto beans, and the rest of the seasonings. Stir all ingredients well and give the sauce a taste for salt.

Let this cook until potatoes are tender. Taste again for salt or other seasonings.

 

Serve over rice or just have it as a stew.
