Chicken Tortilla Casserole

Here’s a recipe you should try.  This is super easy and tasty.   This is an easy way to making enchiladas without all of the fuss.

Ingredients:

1 pack corn tortillas

2 cans of enchilada sauce (your choice green or red)

2 cups of Mexican cheese (Chihuahua)

2 to 3 cups of chicken (1 pack of chicken tenders)

For the meat          

1 tsp cumin

1 tsp garlic powder

1 tsp onion powder

½ tsp salt

1 cup chicken broth

In a crock pot put the chicken, broth and all the seasoning and let it cook for 3 hours on high.

Once fully cook let chicken cool for a little bit and then shred the chicken.

Assembling the casserole

Using a 9×13 baking dish put some of the enchilada sauce at the bottom of the baking dish. Then layer on the tortillas overlapping if needed.

Add a layer of chicken than cheese, and then top that with more enchilada sauce. Repeat layers until all tortillas are gone.

Serves 6
