Chocolate Chip Cup Cakes

Here is a quick and easy dessert recipe you will love Chocolate Chip cup cakes.   These were so much fun to make and this is a recipe your kids will love to help you with.




1 box of yellow cake mix (plus the ingredients per the box)

1/2 cup of mini chocolate chips


Make the cake mix per the instructions on the box.  Then add in the chocolate chips and mix well.

Bake in oven at 350 degrees for the time given on the cake box.

Let cool and enjoy.



These chocolate chip cup cakes go perfectly with coffee in the morning.



A Full Moon

Plan With Me for April 29th – May 6th

Hi guys,  this week for my plan with me I just kept it simple.  I didn’t get a chance to work on my Mini Happy planner this week due to a busy work week, but I did get two of my three planners done.    I am also part a the Plan With Design Group on YouTube and Face Book so go these the group out.  They are awesome people.

For my Classic Happy planner I use some paper I had on hand.    My menu planning section kind was a wack job but it worked for me.



For the Recollections Spiral I used a kit from Nashs print Work.  I love the colors it had on it and had to use it for this week.  Her shop link is below.




Herb Day

Hello today is national Herb day and I want to celebrate it with you by sharing some sites that I found to be helpful with herb.   Using herbs is such a great way to make you meal taste amazing.  I especially love Parsley and Rosemary in my dishes.

Easy Lunch Idea Bacon Lettuce Wraps

Here is a recipe that I have been wanting to try.  This is so easy and inexpensive to make. You can get all of these ingredients from ALDI if that is where you shop.  I love the fact that not it is easy but healthy.

You get your protein and your vegetables as well.  I took this to work and it hit the spot at lunch time.  I also had some fruit on the side which made this a full lunch for me.  I prep for the whole week of lunches so the ingredients are a full work week of lunches.

My daughter tried this with turkey back and it was good as well.



1 package of bacon (or turkey bacon)

2 tomatoes sliced

1 head of lettuce


Wash the tomatoes and lettuce and set aside.

Cook the bacon until crisp and place on paper towel to remove any extra fat.

Take a leaf of lettuce and add in 2 slices of bacon and then your tomatoes.

Note:  you can also add some thin slices of red onion and some avocado as well.

Banana Pie for Dessert

Here is an easy recipe to make when you don’t know what to do with your bananas that are ripe.   This recipe don’t have many ingredients which is how I like it.   I found this on Pinterest and you can also find the pin under the Desserts board.

I love coming up with ideas so that food don’t get wasted.  This was fun to make as well very delicious.



Ready Made Pie Crust
1 box Banana Cream Pudding (3.4 oz)           IMG_3501
1 3/4 cup Milk
8 oz Cool Whip
3 Bananas


Preheat oven to 400.
Par bake crust for 10-15 minutes until golden brown. (directions are on pie crust package)
Allow to cool.
Slice 2 bananas and layer in bottom of crust.
Combine milk and pudding mix and whisk until thickened (about 2 minutes).
Fold in 2/3 of whipped topping.
Transfer to pie crust and chill for at least one hour.
Slice last banana.
Top with remain whipped topping and garnish with banana slices.
