Plan With Me This Week April 23rd – April 29th

Hi Guys, here is my week of layouts for all three of my planners.  I did my layouts a little different then just using Etsy kits.  I also have videos up on each of these on my YouTube channel.  The link to my channel it below.

For my Classic Happy planner I used some paper that I had on hand.  I thought it would be nice to change things up a bit.  This is April so I tried to go with that kind of theme.



For my Mini Happy planner I had some left over from the week before of Brandy’s Shop kit and I just finished using that on my Mini planner.



For my Recollections spiral I used a kit from Sticker Sters.  I love her kits and they fit my planner nicely.  Her Etsy shop link is below.

Pineapple Upside Down Cake Day

I just had to share with you that today is National Pineapple Upside Down Cake day.  I don’t know about you but I love these kind of national holidays.

Garlic Day

Hi Guys, I am so excited about today.  Today is national Garlic Day and I love garlic.  Not only is garlic great in cooking, but it is great for your health.  To celebrate Garlic Day I am sharing some recipes that are amazing for this special day.

Banana Bread

I just love bananas and I try to make recipes with bananas but my family eats them up so quick that they never get to the point of being over ripe.

I was able this time to get me 3 banana that I could use to make some banana bread.  This is one of my favorite breads.  I found this recipe below on Pinterest and have been using since.  I hope you try and enjoy.


Grandma’s Banana Bread

  • 3-4 ripe bananas
  • 1/3 cup / 75 g melted butter
  • 1 cup / 200 g sugar
  • 1 egg beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 1/2 cups / 190 g all-purpose flour
  1. Heat oven to 350F, Gas 4, 180 C
  2. Mix butter and smashed bananas together
  3. Add sugar, egg and vanilla
  4. Add baking soda and salt and mix well
  5. Add flour and give it a final mix
  6. Pour in to a greased 4 x 8 inch loaf pan
  7. Bake for 1 hour

Honey Glazed Pork Tenderlion

I was watching one of my favorite YouTube channels Noreen’s Kitchen and she was making this Honey Glazed Pork Tenderloin and it just look so easy and tasty that I had to try.   This is a really easy dish to make and can be done on a work night.

I had all the ingredients on hand so why not try something new right?  This was absolutely delicious and I will definitely be making this again.  My family just loved it.  The link to Noreen’s Kitchen web site is below so you can also check out some of her fabulous recipes that she does.

2 pounds pork tenderloin (1 package)
4 cloves garlic, minced
½ cup honey
¼ cup orange juice
1 tablespoon Balsamic vinegar

1 teaspoon onion powder

1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon paprika
1 teaspoon salt

1 teaspoon cracked black pepper



Preheat oven to 350 degrees.

Wash pork tenderloin and pat dry with paper towel.  Place on a rimmed baking sheet that has been lined with aluminum foil.

Prepare the seasoning rub by mixing together garlic powder, onion powder, poultry seasoning, paprika, salt and pepper.

Sprinkle the tenderloins all over with the seasoning blend.


Mix honey, minced garlic, balsamic vinegar and orange juice in a small bowl to make a semi thick sauce.

Brush tenderloins with the honey mixture, evenly distributing the glaze between the two pieces of meat.


Bake for 25 to 30 minutes or until a meat thermometer reads 165 degrees.

Remove from oven and tent with aluminum foil.  Allow to rest for 10 to 20 minutes before slicing and serving.


This was very juicy and delicious.  The meat was very moist not dry like Pork can be.



Plan With Me Week of April 16th – April 22nd

Another great week has passed and on to another.  This is my week layouts for my Happy Planner, Recollections Spiral planner, and Mini Happy planner.

For my Mini Happy planner I used the remainder of the Brandys Shop kit I had from the previous week.  It worked out very nicely as you can see.  Brandys Shop link is below so go check her shop out on Etsy.




Finally for my Recollections Spiral I used a kit from Nashs Print Work as well.  I have a lot of her kits and this kit seem fitting for me this week.   Her shop link is above for my Happy planner.  The butterflies are from Dollar Tree and they are so pretty.


Grilled Cheese Day

Hi Guys, did you know that today is national Grilled Cheese Day?  Well I want to celebrate with you this awesome day with sharing a recipe that my husband created.

Now you may think that the ingredients don’t work, but once you taste the grilled cheese sandwich you will be hooked.  I to thought that these ingredient would not work but you have to taste it and you will say what I did “this is very delicious”.

It’s very easy to make and all the ingredients you can purchase from Aldi, so this is also an inexpensive sandwich as well.


Grilled Cheese with Bacon and Guacamole




3 stripes of bacon

1 tbsp. guacamole

1 or 2 slices of mild cheddar cheese

2 tbsp. butter

2 slices of white bread (or bread of your choice)



Heat a non-stick skillet on medium heat.

Then butter one side of each piece of bread.  This is the side that will be facing down in the pan when cooking.

Put one of the buttered bread slice (butter side down) in heated pan, and then top with the cheddar cheese, guacamole, and then the bacon.

Put the other slice of buttered bread on top (with butter side facing up) and cook for about 4 minutes until bottom bread is golden brown.   Then flip the sandwich over (being careful) to brown the other side of the sandwich.

Remove from pan and serve.



Just look at the cheese oozing out.
