Hello everyone, today I have a breakfast recipe that is great for a busy mom. These only take about an hour to make and you will have breakfast burritos for the week. These are delicious and easy to make.
I wrapped these in plastic wrap and just put in my fridge for my husband so he could have breakfast for the week. He always is on the go and forgets to eat breakfast.
Ingredients:
1 package of flour Tortillas (I used the burrito size)
1 Jimmy Dean’s breakfast pork sausage roll
8 eggs
Milk for eggs
Salt and pepper to taste
2 cups of shredded cheddar cheese
1 bag of frozen cubed potatoes
½ tsp onion powder
½ tsp garlic powder
Steps:
Pre-heat oven according to frozen potatoes direction, and then line a sheet pan with foil and pour the potatoes on the pan. Put about a table-spoon of olive oil on the potations along with all of the seasonings and give them a good mix. Add salt and pepper to taste at this time too. Cook in oven per package directions and then let cool.
While potatoes are cooking, in a medium pan cook the sausage until completely done. Once done scramble the eggs in a bowl add salt and pepper to taste and a splash of milk. Add the eggs into the pan with the sausage and cook until eggs are done. Remove from heat and let cool.
Prepare your work station for assembly.
Put the flour tortillas on a plate or a piece of foil so the mess is contained. Have the cheese, potatoes, and sausage and eggs next to your work station.
Using a table-spoon put some of the sausage and egg mix on the flour tortilla. Then put the same amount 1 table-spoon of potatoes on top of the eggs and sausage. Next finish off with some cheese on top. Roll the tortilla until it come together.
Place the burrito in some plastic wrap and set aside. Continue this process until all of the ingredients are used.
You can store enough for the week in fridge and freeze the rest in a freezer zip lock baggies.
