Tilapia Burrito Bowl

Hi Guys, I have a new recipe that I wanted to do for some time and its a burrito bowl.   I wanted to make is more healthier so I am using tilapia for my meat.  This was such a fun recipe to put together and it was fabulous.

I will say that this was not expensive to make.  I was able to purchase all of my ingredients from Aldi which always makes me happy.

Ingredients:

4 tilapia filets

1 tsp cumin

1 tsp onion powder

1 tsp garlic powder

1 tsp oregano

1 paprika

1 package of frozen corn

1 15.5 oz. can black beans (drained and rinsed)

3 bell peppers red, yellow, orange

1 onion thinly sliced

Cooked brown rice

Avocado and lines for garnish

Steps:

Pre-heat oven to 350 degrees

Using ½ tsp each of the seasonings listed season the tilapia and place on a baking sheet lined with aluminum foil.  Spray the foil with cooking spray so the fish don’t stick.  Let the fish cook for about 10 minutes or until done.

While fish is cooking heat a skillet with a drizzle of olive oil and add in the bell peppers and onions. Sprinkle some of the remaining seasoning on the peppers and onion.  Sauté until peppers and onions are starting to soften. Remove from pan and then add in the corn and black beans sprinkling some of the seasonings on top.   Cook until heated through.

Assembly

On a plate add the cooked brown rice down one side, then the peppers, onions, and corn with black beans. Break the fish filets into bit size pieces and place on top.

Garnish with avocado and lime.
