Arroz con Salcichon (Rice and Sausage)

Hi Guys, this is a dinner that I have shared before, but I now have a video up on my channel and wanted to share that with you.

This is a Spanish rice and sausage dish that we just love.   I like serving this with beans on the side along with pico de gayo and some slices of avocado.  This one pan dish is so delicious and easy to make.  I hope you head over to my channel Ruthycancook and watch the video I have for this.  Hey, while you are there hit that subscribe button I would appreciate it.

 

Ingredients:

4 cups Goya medium grain rice

2 tbsp. oil

½ stick of salchichon (farmer’s sausage without pepper corns)

1 8 oz can tomato sauce

1 pk sazon

2 tsp. adobo

2 tsp. garlic powder

2 tsp. onion powder

3 tbsp. safrito

Water

Steps:

Cut salchichon into bit size pieces and set aside

Add oil to pot and put heat on medium high heat. Let the oil heat up

Wash the rice until water runs clear or as clear as you can get it and set aside

Once oil is heated add the tomato sauce, sazon, adobo, garlic powder, onion powder, safrito and salchichon. Stir to combine and let simmer for about 3 to 4 minutes.

Add in the washed rice to pot and stir well.

Add in enough water to just cover the top of the rice.

Let this cook on medium high heat until the water has evaporated from the rice.

When water has evaporated, lower the heat down to low and cover with a lid. Stirring rice occasionally.

Let this cook for about 30 to 45 minutes or until rice is tender.
