Crockpot Salsa Chicken

Hi guys, here is a new recipe that I did.  I needed to through something together for dinner and didn’t know what.  When looking in my deep freezer I see my homemade salsa and some chicken so hmm why not.

I add in some extra ingredients to made this dish great and it was.  All I had to do was throw my ingredients into the crockpot and let it do all the work.  Coming home from work and dinner is done is always great for me.  I made some jasmine rice to serve this over and dinner was done.  I hope you give this a try and let me know what you think.

My homemade salsa (down below)

½ tsp. cumin

1 tsp. garlic powder

1 tsp. onion powder

salt and pepper to taste

Steps

Add in salsa along with the cumin, garlic powder, onion powder.  Then add in the chicken and let cook on high for 3 hours or low for 5 hours.

Once the chicken is done shred it and its ready to serve.

Serve over white rice

Homemade Salsa

1 big can of whole tomatoes

1 15 oz. can of diced tomatoes

1 tsp salt

1/3 tsp sugar

1 medium onion chopped

1 bunch of cilantro

1 jalapeño

Juice of 1 lime

3 to 4 garlic cloves

Using a food processor add in chopped onion and the garlic cloves.  Then add in the jalapeño with seeds removed.  Note:  When working with the jalapeño use plastic gloves.   Chop these up in the food processor until finely chopped.

Add in the cilantro, both cans of tomatoes, sugar and salt.  Chop until all chunks are in small pieces.

Then add in the lime juice and mix again.

Pour into an air tight container and store in fridge.
