Flat Bread with Goat Cheese and Roasted Peppers

Hi guys, here is another one of my quick and easy recipes that is great for a lunch and as an appetizer.

My husband and I like to try different foods for lunch and this is something that we had once when we had a date night as an appetizer and we loved it. He reminded me of this and of course I had to replicate it for us at home.

I know not everyone will like goat cheese but you have to give it a try. It is really a great cheese, and is not used enough in my house.

I also have a video up for this on my channel Ruthycancook, so please head over there and check it out. The video is linked below.

Flat Bread with Goat Cheese and Roasted Peppers

Cook Time 8 minutes
Course Appetizer
Cuisine Mediterranean
Servings 4

Ingredients

  • 4 oz goat cheese at room temperature
  • 1 flat bread
  • 1 red pepper
  • 1 yellow pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp parsley
  • 1/2 tsp olive oil

Instructions

  • To roast peppers
    Pre-heat oven to 450 degrees
Cut peppers in half and remove the seeds
Line a baking sheet with foil and place peppers on sheet with open side down (no oil needed).
Cook for about 25 minutes until the peppers begin to blacken.
Remove from oven and place in a bowl to cool covered with plastic wrap for about 30 minutes.
Once peppers are cooled start peeling off the skin and then cut the peppers into slices.
    Steps:
Line a baking sheet with foil and place the flat bread on it.  Drizzle olive oil on top of bread and spread it out evenly.  (Should be a very light coating)
Using a butter knife put the goat cheese on the flat bread and spread to cover the top of the flat bread.
Next add roasted peppers on top spreading out evenly.
Bake at 425 for 8 to 10 minutes or per the directions of the flat bread.

Note: This makes only one of the flat breads if a two pack.  You can double the recipe to make both of the flat breads in package.
