Tortellini Salad

Here is a great salad that is filling and easy to make. It’s a step up from your traditional pasta salad we make. The tortellini adds more depth to the dish along with flavor.

The ingredients are simple but delicious. You can choose any flavor tortellini you like, there are so many verities. For our salad we used the chicken and herb which gave the salad so more flavor. It was absolutely delicious. Even my husband loved it and he is a picky eater.

This would be great for gatherings, potlucks and grill outs. It just takes a few minutes to prepare so if you need a dish last minute this would work great.

You can make this in advance because the longer it sits in fridge the better it gets. You can use either fresh or frozen tortellini. You can add what ever cheese, vegetables or meat to it. There is no wrong way to make this salad.

The zesty Italian dressing seems to work the best for pasta salads to me. But choose which ever one you and your family prefer.

Tortellini Salad

Ingredients

  • 1/2 Cup Black olives sliced
  • 1 Cup Feta cheese
  • 1 Cup Salami Chopped
  • 1 small container cherry tomatoes cut in half
  • 10 Oz Tortellini 1/2 package of your choice
  • 1 Cup Italian dressing
  • 1/2 Cup Red onion Chopped

Instructions

  • Cook the tortellini per package directions. I used just half of the package and saved the rest for later. Then slice the cherry tomatoes in half and set aside. Drain the black olives and set aside.
    Once the tortellini is done rinse with cold water to cool it down and stop cooking. In a bowl with lid or container add in tortellini, feta cheese, black olives, cherry tomatoes, red onion and salami. Give this a good mix and then add in the Italian dressing. Stir to dressing coats everything. Put in fridge to get cold for a few hours or overnight.
