Bacalaitos (Cod fish fritters)

There is nothing like some good Puerto Rican street food.  Bacalaitos is easy to make and so darn good.   I was always hunting down the food trucks to get these in my neighborhood , but now I know how to make them and can have them anytime I want.  I wanted to make sure when making these that it was the traditional Puerto Rican way.   I hope you try and enjoy these.


½ to 1 lb. Bacalo (cod-fish)

2 cups flour

1/1/2 cups water

1 tsp. baking powder

½ tbsp. Sazon con complete

1 envelope Sazon

Black pepper to taste

2 cloves of minced garlic


Put flour, baking powder, Sazon pack, and Sazon con complete in a bowl and combine well.

Add water to mixture. Add more water if needed. This should be like a pancake batter consistency

Put in Bacalo (cod-fish) and mix well. If more water is needed at this point add

Pre heat oil to fry

Pour a spoon full of batter into hot oil. The size of the fritter is up to you.

Fry to golden brown


Creepy in the Shadows

My husband and I had just pulled into a store parking lot and as we were parking the car this is what our view was.  I just had to take a picture of this unique sight.  It’s just some vines growing along side a building that looks like a tree.   With the night shadows this is a little creepy but pretty at the same time.  I love finding unique things like this to take pictures of .


Happy Mail Time

I went back of one of my favorite Etsy shops #Pretty Cute Planners.  Her sets fits perfectly for my @Happy Planner.  You gotta check her shop out.

I also had to get me some more planner chips.  This shop is amazing #Nonie’s Custom Creations.  I know I will be going back for more.


I also got some more planner stickers from #Love Your Planner Etsy shop.  This is another shop that makes good #Happy Planner sets.

Fresh Strawberry Cobbler

I got this recipe from  She also has a YouTube channel.  This is a fantastic and easy to make cobbler.


3 Cups fresh Strawberries diced    IMG_0663

1/2-3/4 cup sugar

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup sugar

1 cup milk ( I used can milk)

1/2 teaspoon vanilla extract

1 stick butter, melted


Pre-heat oven at 350 degrees      IMG_0662

In medium bowl add strawberries and 3/4 cup sugar.  (I did just a 1/2 cup)

Stir to coat strawberries in sugar and set aside

In a large bowl whisk together flour, baking powder, salt and sugar

Add in milk, vanilla and melted butter

Stir to combine, and if there is a few lumps that is fine

Grease a 9 inch casserole dish and spoon strawberries evenly on top of the batter.  Do not Stir

Bake for 35 – 40 minutes or until its golden brown.  Serve this warm or cold

Plan With Me Week of June 19th thru June 25th

This is a awesome week.  I am on VACATION that’s why.  I used #SG Stationary shop on Etsy for this week’s layout.  This week has a lot of color to it.

Cold Refreshing Ice Tea

Ice tea is such a great drink in the warm weather.  This is such a cool and refreshing drink on a warm day.


10 cups water   IMG_1333

8 tea bags (with tags removed) I use Lipton team, but any tea will work

1 cup sugar


Put the 10 cups of water in a medium to large pot on medium high heat.

Once the water has come to a slight simmer, add in the 8 tea bags without tags.

Turn off the heat and set a timer and let the tea bag sip for about 20 minutes.

Once 20 minutes is done, remove the teabag and discard them.

Add in the cup of sugar and stir until sugar is resolved.  Let tea sit for about 10 minutes to cool.

Once tea is cooled enough, put the tea into a pitcher and refrigerate for about 10 or, you can sever immediately with lot of ice.
