Happy Mail Time

After a long day this is a happy time.  I do love getting me some happy mail.

I got 3 kits from #Adorably Amy Designs on Etsy and can’t wait to use them.  I love her tiny’s they work well for my Mini HP.


And of course I got some more #XO.MamaPlans.  Her personal size kits fits perfectly in my personal planner.  I also got some 2 dollar Tuesday from her as well.  With her 2 dollar Tuesday you get a Hawaii flower at the top of the sheet so you can put this on a 2 Tuesday reward card.  Once the card is filled you just send a pic of it to her and you will get a weekly kit worth $8.25.  That is so smart of her, so go check her shop out on Etsy.



Planner Dividers

I finally got my planner dividers done.  These are just right for what I need them for.  I want to have a section in my planner for meals, and then for notes and ideas.

I know they are very colorful but I love that.  The flower is what my daughter drew for me.  She is so talented.  I am going to start having my daughter draw things for my planner.  She just recent had some of her art work in an action at her college and won an award.  I am so proud of her.


Sloppy Joes

I cook for a family of four so this was perfect and cheap to make and easy to cook. I would this on AllReceipes.com some time ago, and just made it to my family likings. Hope you enjoy.



3 LBS ground beef

1 medium onion chopped

2 or 3 green peppers (depending on size)

1 tsp garlic powder

1 tsp onion powder

1 tsp yellow mustard

3/4 cup ketchup

3 tsp brown sugar

Salt and pepper to taste


In medium pan cook ground beef over medium heat. Once beef is starting to brown add in the onion and green peppers. Then add in the garlic and onion powder and cook this until meat is no longer pink. Drain the fat from the pan and then add in brown sugar, mustard, and ketchup and mix well. Reduce heat and let simmer for about 20 to 30 minutes. Taste for seasonings and add if you so desire.

Servings 6

Note: you can change the beef to turkey or what ever meat you prefer.

Cowboy Chili

I found this on Pinterest I believe when I was looking to make some baked beans, and thought that my family would really like this.  They did and my family renamed this dish to Cowboy Chili.  My daughter put crackers in her beans and it is not bad.  I thought she was crazy at first but I tried it and like it. Please try this and let me know what you think. The original recipe can be found under my Pinterest dinner board.


1 lb of ground beef            IMG_1242

1 lb bacon diced

1 medium onion diced

1 tbsp garlic minced

2 28oz can Van De Kamps Pork and Beans

1 tbsp liquid smoke

1 tbsp Worcestershire

1 cup of your favorite BBQ sauce (I use Baby Rays)

1 tsp onion powder


Preheat over 350

In a Dutch oven pot cook the bacon on medium high heat until crisp and then remove with a slotted spoon and put on a plate with paper towels to drain any access oil off.

Using the same pot remove most of the bacon grease but leaving about a table-spoon and add in the ground beef.  Cook this on medium high heat as well.  Using the bacon grease will give the beef more flavor.  At this point season the ground beef with the minced garlic and onion powder.  Cook the beef until no longer pink.  Drain the beef from its fats and put back into the same pot.

Now add in the bacon Worcestershire sauce, BBQ sauce, liquid smoke, and the beans.  Note: I used the liquid from the bean as well, but you can omit that.  Stir to combine all ingredients well.  Then put this in the oven with the lid on for about 45 minutes at 350 degrees.

Remove from oven and serve when ready.


Note: the original recipe puts in brown sugar but I have omitted that here.  I think the beans are sweet enough, and my family prefers without the sugar.

Serve with corn bread on side or some crackers

You can freeze leftovers as well.  This is a great hardy easy dish to make

Homemade Tomato Soup

Me and my husband grew up on Campbell’s Tomato soup and just loved having it with a grill cheese sandwich.  I decided to just make my own and here is what I came up with. It easy to make and you can have this for lunch or dinner.


1 can diced tomatoes          IMG_0659

1/2 tsp. sugar

1 bouillon cube

1 28oz can tomato puree

2 cloves of garlic minced

Olive oil

2 cups chicken broth

½ tsp. dried basil

½ cup heavy cream


Heat oil in a Dutch oven pan and sauté the garlic over medium heat for about 2 or 3 minutes. Do not let the garlic burn.

Now add in the can of tomato puree, diced tomatoes, chicken broth and all of the spices and stir until well blended.

Heat soup on medium high for 10 minutes and then lower the heat to medium low and add in the heavy cream. Stir the cream in soup until it is mixed throughout.

Let this simmer on low for about 10 minutes stirring constantly and then soup is done.
