CPS Lunchroom Peanut Butter Cookies

These cookies are very yummy. Yes I know that is not the way to describe something, but these are yummy cookies. They take no time at all to make. I found these on Pinterest and had to try them.

Ingredients

  • 1/2 c. salted butter, softened
  • 1/2 c. creamy peanut butter
  • 1/2 c. sugar
  • 1/2 c. light brown sugar
  • 1/2 tsp. vanilla
  • 1 egg
  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking soda

Instructions

  1. Preheat oven to 375° and line two baking sheets with parchment paper.
  2. Cream together the butter and peanut butter on medium-high speed. Add in the sugars and vanilla and continue to mix together until light and fluffy. Mix in the egg. In a bowl combine the flour and baking soda and whisk together. Then stir into the wet ingredients until just combined.
  3. Scoop out 1 tbsp. of mix and roll into a ball if necessary. Place on the prepared pans and with a fork press down top to bottom and then again from left to right. Make sure you are only pressing enough to make marks and thin the dough out some. The cookies should be about 1/4″ thick. Bake for 10-12 minutes and then cool.

Home Made Cheesy Beef Macaroni

If you ever had Hamburger Helper from the box then this recipe will differently change your mind about eating Hamburger Helper from a box.  I found this on Pinterest and did a few changes to it.  Hope you enjoy this recipe.

Ingredients

1 lb. lean ground beef

1 medium size onion, diced

2 garlic cloves, minced

1/2 teaspoon fresh ground pepper

1 teaspoon garlic powder

1 cup can milk

2 1/2 cups chicken stock (or broth

2 cups Penne or Cavatappi

1 cup shredded smoked cheddar

1 cup shredded sharp cheddar

Salt and pepper to taste

Instructions

In a large skillet over med-high heat, brown the ground beef and half way through cooking add in the diced onion and fresh garlic. Cook until beef is longer pink.

Drain any access fat from meat and return to pan.

Stir in the salt, pepper and garlic powder and stir well.

Add in the can milk, chicken stock and macaroni. Stir mixture and bring to a boil. Once it is boiling lower heat to low and let it simmer for about 10 to 15 minutes or until the noodles are tender.

Turn heat off and slowly stir in the cheese until all the cheese is incorporated and melted.

Serve when done

Etsy Haul Purple Planner Paperie

Potatoes Green Peppers and Italian Sausage

Here is a quick, easy and inexpensive dinner for four.  My family just loves when this is for dinner.  You can change out the meat to what ever you like, or even have it meatless.

Ingredients

10 potatoes

3 green peppers chopped

1 medium onion diced

1 tbsp. olive oil

1 package of Italian sausage

Salt and pepper to taste

Steps

Peel potatoes and cut them into cubes.

Put the cubed potatoes into a 9×12 baking dish along with the green peppers and onions. Pour the olive oil over the potato mixture and mix all ingredients until they are well coated with the oil. Sprinkle salt and pepper to taste and mix that in as well.

Place in the oven at 375 degrees for about 30 minutes covered with aluminum foil. After 30 minutes remove foil and cook additional 25 minutes or until potatoes are tender.
