Chocolate Chocolate Peppermint Cookies

Hi Guys here is another cookie recipe that I want to share with you.  The original recipe had called for chocolate chips, but being the Christmas season we used peppermint and this cookies came out amazing.

I am using my favorite cookie recipe book “The Cookie Jar” for this recipe.  I do recommend purchasing this book.  From all the cookie recipes we have tried none has been a fail.

Ingredients

2 1/2 sticks of butter, softened

1 1/2 cups sugar

2 eggs

2 cups flour

3/4 cup cocoa

1/2 tsp baking soda

1/2 tsp salt

2 cups peppermint pieces (this came in a bag)

Steps:

Preheat oven 350 degrees

In an electric mixer, cream butter and sugar until light.  Add eggs. Mix well. On low-speed, add flour, cocoa, baking soda, and salt.  Mix just until blended.

Stir in the peppermint chips

Drop from a teaspoon onto a parchment – lined cookie sheet, spacing each 2 inches apart.

Bake 12 to 15 minutes, or until firm.  Remove cookie sheet from oven.  Cool cookies completely on parchment paper.  Store in an airtight container.
