Arroz and Gondules (Red Rice with Pigeon Peas)

We love Puerto Rican food and this is one of my family favorite dishes. This rice is easy to make and we make it often. Rice is always a good side dish and sometimes even a main dish. This recipe is great for going along side of some Spanish fried pork chops which I have a video up on my channel.  

The flavors in this rice are so good. I do have a recipe for the safrito as well on my website. If you are unfamiliar with gondules you can find these in stores that have a Spanish section.

Ingredients:

4 cups Goya medium grain rice

2 tbsp. oil

1 8 oz can tomato sauce

1 pk sazon

2 tsp. adobo

2 tsp. garlic powder

2 tsp. onion powder

3 tbsp. safrito

1 15oz can gondules (pigeon peas)

Water

Steps:

Add oil to pot and put heat on medium high heat. Let the oil heat up

Wash the rice until water runs clear or as clear as you can get it. By washing the rice you are removing some of the starches which would make for a soggy rice. Once washed and set aside until ready to add to pot.

Once oil is heated add the tomato sauce, sazon, adobo, garlic powder, onion powder, safrito and gondules then stir to combine and let simmer for about 3 to 4 minutes.

Add in the washed rice to pot and stir well.

Add in enough water to just cover the top of the rice. About an inch over rice.

Let this cook on medium high heat until the water has evaporated from the rice.

When water has evaporated, lower the heat down to low and cover with a lid. Stirring rice occasionally. Let this cook for about 30 to 45 minutes or until rice is tender.

It’s ready to serve.
