Our Peanut Butter Cookies

For our Peanut Butter Cookies I looked at several recipes and then put these ingredients together for our cookies.  If you like a peanut buttery cookies this is the one.  Please try and hope you enjoy.

Ingredients:        IMG_0191

½ cup shorting

1 ½ cup peanut butter

½ cup white sugar

½ cup brown sugar

2 eggs

1 teaspoon vanilla extract

1 cup all purpose flour

1 teaspoon baking powder

¼ teaspoon salt

Steps:

Preheat oven to 350 degrees F (175 degrees C)

In medium bowl, cream together the shorting, peanut butter, and sugar. Beat in the eggs one at a time, and then stir in the vanilla. Combine the flour, baking powder and salt. Slowing stir into peanut butter mixture making sure all ingredients are incorporated.

On cookie sheet drop rounded spoonful of peanut butter mixture

Bake for 8 to 10 minutes in preheated oven. Cookies will be soft and chewy if not over baked.

Allow cookies to cool on a cooling rack until completely cooled

Quick and Easy Lunch

Tuna Salad

Something for Lunch. It’s quick and easy and stores well.

Ingredients:

2 table spoons Mayo
    Tuna Salad

1 small onion chopped

1 1/2 cups elbow macaroni

1 to 2 celery stalks chopped

1/2 teaspoon salt

Steps:

Fill a medium pot with water about half way and put salt in it, so the noodles can cook. Once water has reached a boil, put elbow macaroni into water and let cook for about 8 to 10 minutes on medium heat. 
While noodles are cooking chop the onion and celery into small pieces and set aside. 
Drain elbow macaroni and rise with cold water to stop the cooking process and to also cool them down. Once they are cooled enough, add the mayo, onion, and celery and mix until all is blended. 

Serve with crackers

Pecan Pie Muffins

These are such a treat to eat. I got this recipe off of Allreceips.com If you like peacan pie then you will love these. Make sure to spay your muffin pan very well. I didn’t have any problem with sticking, but this will help.

Ingredients

1 cup packed light brown sugar  IMG_0322

1/2 cup all-purpose flour

1 cup chopped pecans

2/3 cup butter, softened

2 eggs, beaten

Directions

1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour 18 mini muffin

cups or line with paper muffin liners.

2 In a medium bowl, stir together brown sugar, flour and pecans. In a separate

bowl beat the butter and eggs together until smooth, stir into the dry i

ngredients just until combined. Spoon the batter into the prepared muffin cups.

Cups should be about 2/3 full.

3 Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Cool on wire racks

when done.

Friday – Pizza

 

Saturday’s are always a what ever night.

Our Anniversary

Today May 17th is our anniversary of marriage. I have been married to this man for 14 years, and I wouldn’t have it any other way. We have had our ups and downs throughout our marriage, but nothing that we couldn’t get pass or resolve. We were truly meant to be together, this I do believe.  I found my soul mate for life.   May there be another 14 years and more for us.
