Mini Banana Blueberry Muffins

Ingredients
  

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 3 ripe bananas
  • 1 egg
  • 1/3 cup melted butter
  • 1/2 tsp vanilla
  • 1 cup blueberries fresh or frozen

Instructions
 

  • Preheat oven 350 degrees
    Line your muffin tin with liners or grease them with butter or cooking spray
    In a bowl add in the bananas and mash them with a fork. Ripe bananas are the best to do this with. Once bananas are mashed add in the egg, vanilla, melted butter and give this a good mix.
    In another bowl add in the flour, sugar, baking powder, baking soda and salt and give a quick stir so all ingredients are incorporated.
    Now add the wet ingredients to the dry and mix well unit all ingredients are well blended. Then add in the blueberries and fold those in not smashing them.
    Pour the batter into the lined or greased muffing tins and fill about 1/2 full. Keep this up until all batter is done.
    Place in preheated oven and cook for 20 to 25 minutes depending on your oven. When done use a toothpick to check the center of the muffing making sure it comes out dry. If not just put back in oven for a few more minutes.
