There is nothing like the smell of fresh baked banana blueberry muffins lingering in the air.
This is an easy recipe that comes together in minutes. I am not a baker but this recipe is so easy and delicious it makes baking simple and fun.

If you have bananas that are ripe and need to be used this recipe will do the trick. We always have frozen blueberries on hand for smoothies so why not throw some blueberries into the mix.

These muffins are great for on the go and a quick breakfast with coffee or milk. They are also great for a quick snack in the afternoon when you just want a little something. These muffins are moist and not too sweet.
This recipe uses simple ingredients that you likely have already. No mixer is needed for these muffins but you can use one if you like. Don’t like washing dishes you can use just one bowl for this recipe making clean up easy.

We were able to get 48 mini muffins out of this. We put some in the freezer for another day.


Mini Banana Blueberry Muffins
Ingredients
- 1 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup sugar
- 3 ripe bananas
- 1 egg
- 1/3 cup melted butter
- 1/2 tsp vanilla
- 1 cup blueberries fresh or frozen
Instructions
- Preheat oven 350 degrees Line your muffin tin with liners or grease them with butter or cooking spray In a bowl add in the bananas and mash them with a fork. Ripe bananas are the best to do this with. Once bananas are mashed add in the egg, vanilla, melted butter and give this a good mix. In another bowl add in the flour, sugar, baking powder, baking soda and salt and give a quick stir so all ingredients are incorporated. Now add the wet ingredients to the dry and mix well unit all ingredients are well blended. Then add in the blueberries and fold those in not smashing them. Pour the batter into the lined or greased muffing tins and fill about 1/2 full. Keep this up until all batter is done. Place in preheated oven and cook for 20 to 25 minutes depending on your oven. When done use a toothpick to check the center of the muffing making sure it comes out dry. If not just put back in oven for a few more minutes. Enjoy
