Mexican Rice

This is my version of Mexican rice.

 

Ingredients:

3 cups of white rice     IMG_1180

2 tbsp. oil

½ tsp. Cumin

½ tsp. Chili powder

½ cup of water

1 tsp. minced garlic

1 tsp. powder chicken bouillon

1-½ cups of chicken broth

1 8oz can of tomato sauce

 

Steps:

Put oil in deep pan and heat at medium high.

Then add in the rice and brown slightly. (Do not walk away at this time. Rice can burn) Stir rice constantly until rice takes on a light brown color.

Then add in tomato sauce and stir rice until the rice is well coated with the tomato sauce.

Then add in the garlic and stir until well combined.

Add in water and broth and cook until liquid evaporates and then put a lid on the pan.

Cook for about 25 minutes or until the rice is done.

Chinese Rice

This is the best and easy rice I have done.  I know don’t need to order out when I want Chinese rice.

Ingredients:

4 to 6 cups of already cooked white rice                IMG_1176

1 ½ cups of beef or chicken (cut into small pieces)

1 cup of bean sprouts

½ peas

1 medium onion diced

1 to 2 cloves of garlic minced

3 tbsp of sesame oil

¼ cup or less of soy sauce

3 green onions chopped

Instructions:

Cook beef/chicken in sesame oil until no longer pink, and remove once done.

Put in white onion, garlic, and peas cook for 5 minutes.

Add white rice stirring all ingredients together. Once all incorporated, add back in the meat and bean sprouts stir all ingredients well.

Now add in soy sauce (I did a table spoon at a time) until you are at the likeness you want.

 

Serve when ready

Planner Make Over

My project is done.  I just finish re-doing the make over of my Michael’s binder and it looks so much better to me.  It did not cost me anything to give my planner a make over.  I had all the supplies on hand and just used what I had.  Here are the supplies I used ( I did use double-sided tape too).

The decorative duck tape was from Dollar Tree and card stock from Wal-Mart.

Here is my finished planner now.  I am putting my Happy Planner pages into this one, so I can use a ring binder instead.   This only took about an hour or so to do.  Using duck tape is not an easy thing, but I made it work.

I am happy once again with my DIY project.  I’m not a crafter but I do the best with what I know.  Now to finish putting in the rest of the Happy Planner pages.

Next I want to work on are dividers for this.  Stay toned there is more to come.

Sunday Dinner

I made for my family Spanish dinner tonight.  We had Lechon (picnic ham) with rice and Gondulas (Puerto Rican Rice with Pigeon peas).

I just let the meat cook low and slow for 7 hours and it was done.  I love easy Sunday dinners.

Soup Today

New Project

My new project is to turn my 5 dollar Michaels binder into something awesome.  I am going to use materials I already have in my stash and a lot of creativity.  I’m converting this binder into my new Happy Planner binder.   I like the Happy Planner but not so much the rebidding of the pages once I am done with the weekly layout.   So I am going to make it easier by just switching to a binder and then punching holes is all I need to do.    Easy peasy planning is what I like.

I will be switching to a planner with rings next year, but for now this is my temporary fix.
