A Big Thank You

Hello

I want to start off with saying thank you to anyone who has stopped by my blog even if it was just for a few seconds.

I know my blog site is not what most would consider a place to be visited, but I am working on it. It took me this long just to get a schedule down where almost everyday I have something being posted.  I work full-time so by the time I get home I am so tired my brain is fired, so tying to write something is not an option.

I had put too much pressure on myself to do my blog that I got overwhelmed and just didn’t do anything. I have now decided to post things I do to get me started, and so far this is working out great. I am happy that I have gotten this far with my blogging and staying ahead.

This is my start to getting my blog on the right track. I would say that everyone has a beginning and from there they improve or change. Well this is my beginning. This is how I am starting and as time goes on I hope to improve.

So again I thank you for stopping by and acknowledging that my blog does exist.

Apple Pie Dumplings

This is just 2 ingredients that is amazing for a dessert.   I found this on Pinterest @spendwithpennies. This is a quick and devious dessert you must try.  This is my backup apple pie now.

Ingredients

  • 1 (21 oz) can of Apple Pie Filling   DSCF0021
  • 1 roll crescent rolls
  • 1 teaspoon cinnamon (optional)

Instructions

  • Preheat oven to 375 degrees.
  • Open crescent rolls and cut into 12-14 equal pieces.
  • Stir Apple Pie Filling and crescent rolls (and cinnamon if using) together to coat the crescents with the sauce.
  • Pour into a 2 qt casserole dish, ensuring the crescent pieces are on top of the pie filling.
  • Bake 25-30 minutes or until crescents are completely cooked flipping crescents after 15 minutes.

Serve warm with ice cream or whip cream

Homemade Bean and Bacon Soup

I used to love the bean and bacon soup in the can, but it just wasn’t the same anymore, so I search to see if I could find anything that was close to this soup that I loved as a child.  I found the soup recipe @tasteandtellblog and couldn’t wait to make it.   This is an easy soup recipe to make.

Ingredients

  • 8 oz. bacon diced
  • 1 cup diced yellow onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cans (15 oz each) Great Northern beans, drained and rinsed
  • salt and pepper
  • 1 can (8 oz) tomato sauce

Instructions

  • Cook the bacon in a soup pot or Dutch oven until crisp. Remove with a slotted spoon to a paper towel lined plate. Discard all but about 2 tablespoons of the bacon grease.
  • To the hot bacon grease, add the onions, carrots and celery. Cook over medium heat until they start to soften, about 5 minutes. Add the garlic and cook an additional minute. Stir in the chicken broth and beans. Season to taste with salt and pepper. Bring to a bubble then reduce the heat to low and let the soup simmer for 1 hour.

Remove half of the soup to a blender or food processor. Process until smooth. Return the puree to the soup pot and stir into the remaining soup. Add the tomato sauce and ¾ of the reserved bacon and stir to combine. Taste and season to taste with salt and pepper. Let the soup simmer until it is heated through, about 5 minutes. Serve topped with the remaining bacon.

Plan With Me Week of June 26th thru July 2nd

For this week I am using a weekly kit from #Pretty Cute Planner.  I have a #Happy Planner and her kits fit great.  This week is colorful and energetic.   The washi tape was from Michael’s.

Fun Sunday Breakfast

I try to keep breakfast quick and easy for me.  I was looking for new breakfast ideas on Pinterest (of course) and found this idea.  It don’t take a lot of ingredients or time to make, and its a quick bit for busy mornings.

All you need is:

Pancake mix

blue berries (or fruit of choice)

chocolate chips

Steps:

Pre-heat oven to what is on the pancake mix box.

Make the pancake mix as directed.

Grease the mini muffin tins and pour the pancake mix into each mini muffin tin and fill about a fourth full.  Sprinkle the blue berries and chocolate on top of the muffins.

Let this cook in the oven for about 10 to 12 minutes or until done.  Use a toothpick to test the middle of the muffin and if it comes out clean then done, if not cook a few minutes longer.

Let cool and serve with powder sugar or syrup.

Weekly Meals for Week of June 25th thru July 1st

I do a weekly meal plan so we don’t eat out.   I have come to enjoy planning our meals we eat.
