Greek Chicken Kabab

Hi Guys, this recipe was amazing.  This whole week I have been making Greek dishes and they were so easy to make.  These kababs were a big hit with my family so these are differently a keeper.

Ruthy’s Hangout

Ingredients:

1 package of chicken tenders

1 package of Skewers (if wood soak in water before cooking with them)

2 tsp. of Greek seasoning   (source: TakeTwoTapas.com)

 

Steps:

  • Cut chicken into bit size pieces and place in bowl. Add seasoning and mix well.  Let the meat marinade for at least 1 hour but longer is better.   Have skewers soaking while meat marinades.
  • Take the pieces of chicken and push through on the skewers. Fill each skewer to your liking.
  • Put finished chicken skewer on a plate and repeat process until all chicken is gone.

 

You can cook these on a grill, oven, or stove top.    Cook chicken until done.

Greek Potatoes

Hi Guys, I have an awesome Pinterest find for you.  These are some greek potatoes that are so easy to make and very tasty that you have to give them a try.  I got this off of Jo and Sue Blogpost.com.

Ingredients

1/3 cup olive oil

1 1/2 cups water

4 cloves of garlic, minced

1/4 cup freshly squeezed lemon juice

1/2 Tbsp. dried oregano

2 cubs of chicken bouillon

6 or 7 potatoes, peeled and quartered

 

Steps:

Pre-heat oven to 350.

Whisk together first 6 ingredients.

Place quartered potatoes in large casserole dish, pour mixture over them.

Cook covered, at 350 until potatoes are tender. (About 1 hour) To crisp up outside of potatoes – uncover and place under broiler for the last 5 minutes of cooking time. Watch carefully so they don’t burn!

Tzatziki Sauce

Hi Guys, I wanted to have some Greek food this week so I made a little of everything I wanted to try.  This recipe is from GimmeSomeOven.com that I found on Pinterest.   This Tzatziki sauce was great and you should try it.

Ruthy’s Hangout – Tzatziki Sauce

INGREDIENTS:

2 cups full-fat plain Greek yogurt

4 garlic cloves, peeled and minced

1 English cucumber*, seeded and grated (about 1 cup)

1 tablespoon chopped fresh dill (not dried dill)

1-2 tablespoons fresh lemon juice, to taste

1 tablespoon olive oil

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

 

DIRECTIONS:

1 Stir all ingredients together until combined. Taste and adjust seasoning if needed.

2 Serve immediately, or refrigerate in a sealed container for up to 2 days.

I recommend using an English cucumber so that you don’t have to worry about removing the seeds.  For a thicker sauce, feel free to squeeze the excess juice out of the shredded cucumber before adding it to the dip.

Greek Seasoning Mix

Hi Guys, are you looking for a great seasoning mix well I found one for you.  I found this on Pinterest TakeTwoTapas.com and thought I give it a try.  I was looking for something different with great taste and bingo I found it.   This is a nice greek seasoning that you can use to give something some extra flavor.

Ingredients:

1 tbsp. basil (dried)

1 tbsp. dill (dried)

2 tbsp. garlic powder

1 tbsp. onion flakes

2 tbsp. oregano

1 tbsp. parsley (dried)

1 tbsp. rosemary (dried)

1/2 tbsp. thyme

1 tbsp. lemon pepper seasoning

1/2 tbsp. marjoram

1 tbsp. salt

1/2 tbsp. black pepper

1/2 tbsp. cinnamon

1/2 tbsp. nutmeg

INSTRUCTIONS

Mix all seasonings together and then store the seasoning mix in an air-tight container.  I used a mason jar.

You can use this on chicken, steak, potatoes, just about anything.

cheese and Sausage Breakfast Muffins

Hi Guys, this was a week of muffins for my house.  All of them were great Pinterest finds.  On the go food is always something good in my house whether running out to work or school.

Ingredients

1 egg

1 cup milk

1/4 cup vegetable oil

1 cup cooked, crumbled sausage

1 cup shredded cheddar cheese

2 cups flour

2 tbsp of sugar

3 tsp baking powder

1/4 tsp of salt

1/8 tsp of garlic powder

1/2 tsp of pepper

Steps:

Pre-heat oven to 400 degrees.  I

n a large bowl, beat the egg, milk and oil together.  Stir in the sausage and cheese.

Add in the dry ingredients until blended.

Fill paper liners 2/3 full.  Bake for 15-20 minutes.

Allow to cool on the rack out of the muffin tin.  Store in the fridge and microwave for 30 seconds just before you eat. Makes 12.

Orange Muffins

Hi Guys, I have found another great muffin for you to try.  These are easy to make and very delicious.

I love making muffins these are such a great snack food when you are on the go.  This find was found on The Pastry Queen by Rebecca Rather website.

INGREDIENTS

For the muffins:

1 cup milk

½ cup freshly squeezed orange juice

½ cup sour cream

2 large eggs

2 sticks (16 tbsp.) unsalted butter, melted

3½ cups all-purpose flour

1 cup sugar

1½ tbsp. baking powder

½ tsp. salt

Zest of 1 orange (organic if possible)

For the glaze:

¼ cup freshly squeezed orange juice

1½ cups confectioners’ sugar

1-2 tsp. orange zest (organic if possible)

 

DIRECTIONS

Pre-heat the oven to 350˚ F.  Line 16 wells of a muffin pan (or pans) with paper liners.  In a medium mixing bowl, combine the milk, orange juice, sour cream, eggs and melted butter.  Whisk together to blend.  In a large mixing bowl, combine the flour, sugar, baking powder, and salt.  Stir to blend.  Pour the wet ingredients into the dry ingredients and mix just until incorporated.  Fold in the orange zest with a spatula.

Divide the batter evenly between the prepared muffin cups.  Bake about 18-20 minutes, or until a toothpick inserted in the center comes out clean.  Let cool in the pan 5-10 minutes, then transfer to a wire rack placed over a baking sheet.

To make the glaze, combine the orange juice, confectioners’ sugar, and orange zest in a small bowl.  Whisk together until smooth, adding more juice if necessary to achieve your preferred consistency.  Drizzle the glaze over the muffins while they are still warm.  Allow the glaze to set before serving.  Store in an airtight container.
