Hi Guys, I have another Pinterest recipe find.  I was looking for something for breakfast that would be great to grab and go, but had the ingredients that are needed to start you day off right.

These muffins are great and they are so good for those mornings on the grab and go, and if you eat two you won’t feel guilty as they are healthy muffins.



1½ cups large rolled oats

1 cup whole wheat flour (60%. You can use all-purpose flour if you prefer)

3 tsp baking powder

½ tsp salt                                    190943D3-B0E6-4640-92F0-B50525950D54

1½ tsp cinnamon

½ tsp nutmeg

2 eggs

4 tbsp. vegetable oil

6 tbsp. sugar

⅔ cup milk

1 cup mashed ripe banana

1 cup grated unpeeled apple (approximately one large apple)


  • Mix together the oatmeal, whole wheat flour, baking powder, salt, cinnamon and nutmeg. Set aside.
  • Beat together the eggs. Oil and sugar until fluffy.
  • Blend in the milk.
  • Fold in the dry ingredients and when the flour is almost incorporated fold in the mashed banana and grated apple.
  • Do not over mix. Fold in only until the fruit is mixed through the batter.
  • Spoon into greased or paper lined muffin tins and bake at 350 degrees F for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm.

Crock Pot Chicken and Gravy

Hi Guys,  I have an easy weekend dinner for you.   My weekends are always so busy that not all the time I have time to cook or I am just to tired, so that is when I pull out my crock pot and have dinner done without fussing over it.  I absolutely love my crock pots and they are a life saver for me.

This recipe is so easy all you have to do is really dump it in the crock pot and walk away.  Who don’t love that kind of cooking?   I hope you try and enjoy my crock pot chicken and gravy.

The chicken is so tender and moist.




3 cups chicken broth

2 cans chicken gravy

1 can cream of chicken

1 package of chicken tenders (or your choice)

1 tsp. chicken flavor bouillon

½ tsp. garlic powder

½ tsp. onion powder

Salt and pepper to taste


In a 6 quart crock pot add in the broth, chicken gravy, soup, chicken flavor bouillon, onion powder and garlic powder and this a good stir.

Then add in the chicken and stir to coat.

Put crock-pot on low for 5 hours or high for 3 stirring occasionally.

When the chicken is done you can serve with mashed potatoes and a vegetable.


Bacon Wrapped Chicken

Hi Guys, I have another awesome recipe for you.  This is bacon wrapped chicken and it is delicious.  This is super easy to make so you can make this on a week night after work.

All the ingredients for this recipe can also be found at Aldi which you know makes my budget and me happy.






1 package of chicken tenders

1 lb. of bacon

1 tsp chicken seasoning (your choice)

½ tsp garlic powder

½ tsp onion powder


Pre-heat oven 375 degrees

Wash the chicken and pat dry.

In a zip lock bag add in the chicken along with all of the seasonings.  Then coat the chicken well with the seasonings.  Let the chicken marinade for at least 30 minutes.

Prepare a baking dish that had sides with aluminum foil.

Wrap each chicken tender with one slice of bacon placing the open end facing down on the baking sheet.

Cook for about 30 minutes or until bacon is crisp and chicken is done.

*Note you can finish them off either under the broiler or toaster oven.


Eatable Cookie Dough

Hi Guys, I have a recipe today that my daughter made and it is so amazing.   I could not believe that this was made with chic peas.  This looks and taste like cookie dough.  You have to try this and I know you will love it just like me.






1 can Chic peas

2 tbsp. sugar (can be substituted)

2 tbsp. brown sugar

½ cup oats

½ cup chocolate chips


Put the chic peas and the oats in the food processor along with the brown sugar, and white sugar and process until it forms into a dough like texture.

Then remove the dough from the food processor into a mixing bowl and add in the chocolate chips mixing well.

Store in airtight container in refrigerator up to a week.

For my Classic Happy Planner I used a paper pad from Dollar Tree, and the washi was from Michael’s.  I think it came out pretty cute.



For my Mini Happy Planner I used the Mambi Stickers books for the Mini Happy Planner.   I love the big date covers don’t you?

What did you do with you planner this week?

Macaroni Salad

Hi Guys, here is an easy summer salad that goes with just about everything.  We did some grilling over our vacation and this is one of the salads I made to go along with our burgers and chicken.

You should make this the day before so it can rest overnight in the refrigerator before serving it.  You can add in any ingredients or take away that is the beauty of this type of salad it is so interchangeable.




1 ½ cup mayo

1 or 2 tbsp. Vinegar

1 tbsp. mustard

1 tsp Sugar

¼ cup Diced ham

½ of jalapeno diced (depending how hot you want it)

¼ cup Diced green onion

Salt and pepper

1/3 cup Bacon bits

Elbow macaroni

2 or 3 stalks of Celery


Cook elbow macaroni according to package directions.   Let macaroni cool and then add in the Mayo and mustard making sure the macaroni is completely coated.

No add in the remaining ingredients mixing them well.  Taste for salt and pepper at this point.

Cover with plastic wrap and set in fridge for 2 hours but overnight is better.




Parmesan Breaded Tilapia

Hi Guys, for the recipe today I made Parmesan Breaded Tilapia.  This recipe today is easy to make as well as inexpensive.  Everything in this recipe can be bought from Aldi (my favorite store) and take just minutes to make.

For those of you who are not real fish eaters (like me) this is perfect for you.  Tilapia has such a mild fish flavor to it that you don’t know you are eating fish.   It takes on what ever spices you use and is very delicious.





4 Tilapia filets

1 tsp garlic powder

1 tsp onion powder

1 tsp parsley

2 cups panko

Salt and pepper to taste


Mix together the panko, parmesan cheese, and parsley until well incorporated.

Season the Tilapia filets with the garlic powder, onion powder and salt, pepper to taste.

In a non-stick skillet add about 1 teaspoon of olive oil on medium heat.

Add in the tilapia but don’t over crowd the pan.  Cook 5 minutes on each side until the outside golden brown.   Repeat until all filets are cooked.

Serve with side of your choice
