Hungarian Goulash

Hi Guys, this is a new recipe that I wanted to try.  I had Goulash when I was a child and it was just so good.  I have been searching for some time now to find the right Hungarian Goulash to cook for my family, and this is what I came up with.

When making this recipe I forgot the sour cream so I just left it out, but the flavors were still there.

Ingredients

2 tbsp. olive oil

1 large yellow onions, diced

3 lbs. stewed beef

5 tbsp. paprika

1 tbsp.  tomato paste

2 cloves of garlic, minced

3 tbsp. flour

Water to cover

Salt and pepper to taste

1 cup Sour Cream

1 tsp. steak seasoning

1 tsp. onion powder

1 tsp. garlic powder

Steps:

  1. Warm the oil in a large pot on medium heat. Add the onion and garlic and cook them for about 2 minutes.Then add in the beef along with the steak seasoning, garlic powder and onion powder.  Cook the meat until it is brown on the outside. About 10 minutes.
  2. Add in the paprika and stir until the meat is covered. Then add the flour and tomato paste.Stirring until the liquid is absorbed.
  3. Now add water enough to cover the meat. Make sure to stir well removing any lumps from the flour.
  4. At this time add in salt and pepper if you like. Bring to a boil, and then cover and simmer on low for about two hours.
  5. Once the sauce has thickened and meat is tender this is ready to be served.

Serve over egg noodles

Strawberry Short Cake

Hi Guys, I made Strawberry Short cake one of my many favorite desserts.  This is something is easy and fun to make.   I hope you enjoy.

Ingredients:

1 tub of cool whip topping

1 ½ cup strawberries (sliced)

1 pound cake (store-bought or homemade)

 

I made the pound cake and used a recipe from King Arthur Flour link is below.

Steps:

If making the pound cake from starch just follow the recipe and let cake cool completely.

Once the cake has cooled completely slice the pound cake length wise to make 3 layers.

Spread the first layer with some of the whip topping.  Then add some of the sliced strawberries on top of the whip topping.   Put on second pound cake layer and repeat the above process until all layers are done.

If any whip topping is left spread over top of cake and then add more sliced strawberries.

Keep refrigerated

Pancakes (homemade)

Hi Guys,  another recipes find on Pinterest.  I have been searching out for a good pancake recipe and I found it.  This recipe is easy to make and is fluffy and delicious.  This recipe came from Chef John and if you know anything about him he make the best food videos ever.  He also does cooking videos for All Recipes.com as well.

Ingredients:

1 ½ cup all-purpose flour

3 1/2 teaspoons baking powder

1 teaspoon salt

1 tbsp. white sugar

3 tbsp. butter (melted)

1 Egg

1 ¼ cup milk

Cooking spray

Steps:

Sift together flour, baking powder, salt, and sugar in a large bowl.

Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.

Preheat a large skillet over medium-high heat. Spray with cooking spray. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.

Just add some butter and syrup.

Ice Tea (Cold and Refreshing)

Today’s national Ice Tea day and I am sharing my Sweet Ice Tea with you.  This is a family favorite and is not just made in the Summer.

This is so easy to make and you control how much sugar is in your Ice Tea drink.  I hope you make this and love it like we do.

Ingredients:

10 cups water

8 tea bags (with tags removed)

1 cup sugar

Steps:

Add 10 cups of water to a big pot on medium high heat and let the water almost come to a boil.

Add in the 8 tea bags with tags removed and put in the water.  Turn heat off and let the tea bags steep for 20 minutes.

Then remove the tea bags and put in the 1 cup of sugar and stir until all of the sugar is dissolved.

Place tea in a pitcher and refrigerate for a few hours or until tea is cold.

Serve over ice and a lemon wedge.

Chocolate Chocolate Chip Ice Cream – Dairy Free

Hi Guys, Here is a new recipe that I was so excited about.  In my house we have a lot of dairy allergies so learning how to make my own ice cream was so exciting for me.  My family was amazed that I did this and didn’t  need an ice cream machine to make it.  This was so easy and cheap to make.  All the ingredients I was able to find at Aldi, which I am always happy about.

Ingredients

3 bananas sliced and frozen

1/4 cup coconut milk

1 teaspoon vanilla extract

4 tablespoons cocoa powder

1 cup Chocolate chips

Steps:

  1. In food process blend everything until the frozen bananas are smooth and all ingredients are well combined.
  2. Pour the ice cream into a freezer safe dish and allow it to freeze for another hour.

Tilapia Burrito Bowl

Hi Guys, I have a new recipe that I wanted to do for some time and its a burrito bowl.   I wanted to make is more healthier so I am using tilapia for my meat.  This was such a fun recipe to put together and it was fabulous.

I will say that this was not expensive to make.  I was able to purchase all of my ingredients from Aldi which always makes me happy.

Ingredients:

4 tilapia filets

1 tsp cumin

1 tsp onion powder

1 tsp garlic powder

1 tsp oregano

1 paprika

1 package of frozen corn

1 15.5 oz. can black beans (drained and rinsed)

3 bell peppers red, yellow, orange

1 onion thinly sliced

Cooked brown rice

Avocado and lines for garnish

Steps:

Pre-heat oven to 350 degrees

Using ½ tsp each of the seasonings listed season the tilapia and place on a baking sheet lined with aluminum foil.  Spray the foil with cooking spray so the fish don’t stick.  Let the fish cook for about 10 minutes or until done.

While fish is cooking heat a skillet with a drizzle of olive oil and add in the bell peppers and onions. Sprinkle some of the remaining seasoning on the peppers and onion.  Sauté until peppers and onions are starting to soften. Remove from pan and then add in the corn and black beans sprinkling some of the seasonings on top.   Cook until heated through.

Assembly

On a plate add the cooked brown rice down one side, then the peppers, onions, and corn with black beans. Break the fish filets into bit size pieces and place on top.

Garnish with avocado and lime.
