Banana Bundt Cake

Hi Guys, here is another great recipe to try. I know it has been awhile since I have published something, but I am back with new recipes to try.

This recipe is easy to make and very delicious. I am always trying to find new recipes that I can incorporate bananas in when they become ripe, and desserts always seem to win this prize.

The icing for this is just the basic confectioner sugar and milk. You can add vanilla for a little more flavor if you like.

I can tell you that this cake did not last long in my house. It was so moist and perfectly sweet from the ripe bananas.

Banana Bundt Cake

Equipment

  • Hand Mixer

Ingredients
  

  • 3 cups Flour
  • 1 cup sugar
  • 2 eggs
  • 1 cup milk
  • 3 to 4 ripe bananas
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/3 cup melted butter
  • 1 tsp vanilla
  • 1/2 tsp salt

Icing 2-cups powder sugar2 or 3 tbsp. milk (more if needed)1 tsp. vanilla

    Instructions
     

    • Pre-heat oven 350 degrees
      In small mixing bowl add the mashed bananas along with eggs, vanilla, butter and sugar and mix well using a mixer on low speed.
      In a medium mixing bowl put the flour, salt, baking powder, and baking soda and stir together. 
      Combine wet ingredients into dry and mix on low speed.   Then add in the milk and finish mixing.
      Pour into a greased Bundt pan evenly and then bake at 350 degrees for 45 to 50.  Check at the 45-minute mark to see if done. 
      Let cake cool and then drizzle on icing.
