Chicken Liver and Gizzards

Here is a budget friendly meal that is delicious and cheap. It don’t take much to put it together and it doesn’t break the bank.

To order chicken liver and gizzard from a restaurant would cost about 20.00 dollars. That’s a lot of money for maybe 1 to 1 1/2 servings. Now consider the price to make it at home. Say each package of gizzards are 2.50 and the liver is about 2.00 that’s a total of 4.50 to make it yourself and you can feed up to 4 to 6 people. It’s outrageous how much of a price difference that is.

I learned to cook this from my childhood. My father was a great cook and he grew up in an era where food was scarce. He served in WW2 and if you know anything from that time you know survival was hard.

I do nothing fancy just some flour and seasonings. I make sure that I season the flour very well and give the chicken liver and gizzards a good rinse. I dredge them in the seasoned flour and let them rest for about 10 minutes before I start frying them.

The liver does cooks quicker than the gizzards so keep an eye on the liver.

It took maybe 30 minutes to cook the liver and gizzards but so worth it. We also made some chicken wings to go along with it.

Ordering food is convenient I know but you don’t need to spend a lot of money to have a great meal at home that is also better tasting.

Ingredients
  

  • 1 lb chicken liver
  • 1 lb chicken gizzards
  • 2 cups flour
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp paprika
  • 1 tsp adobo

Instructions
 

  • Clean the chicken liver and gizzard and pat dry.
    In a shallow dish add in the flour along with the seasonings and mix it well.
    Add in the chicken liver to the seasoned flour and dredge them to fully coated. Remove from flour and place on a sheet pan. Continue dredging the rest of the liver and then do the gizzards as well.
    In a deep pan add about 2 cups of oil or more if needed. Let the oil reach a temperature of 350 degrees and it ready to start frying.
    In batches add in the liver to the oil and without crowding and cook them until golden brown. The liver should take around 10 to 20 minutes to cook. Remove when done and place on a paper towel line pan to drain any excess oil. Repeat this process until all the liver is cooked.
    Same pan add in the gizzards in batches and let cook for 15 or so until golden brown and done. Repeat process until all the gizzards are fully cooked.
    They are ready to be served.
