This is an easy and inexpensive meal. You can do this recipe in a crockpot like I did, or you can make it on the stove.

This recipe is also versatile with the meat. You can use chicken breast or thighs which ever is your preference.

This meal does not cost must to make and can feed a family of 6. You can add a vegetable on the side like broccoli or whatever you prefer.

I trimmed off any fat that was on the chicken breast first, and I used my homemade chicken broth. The mustards we got from Aldi which was cheaper than the other stores.

This chicken came out great in the crockpot. We had leftovers so we had this for 2 nights which my family did not mind.

We served it over some jasmine rice and it was delicious.

Equipment

  • Crockpot

Ingredients

  • 2 large chicken breast or thighs
  • 1 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 3 tbsp honey
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup chicken broth

Instructions

  • Cut chicken into bit size pieces then season the chicken with the garlic and onion powder and set aside.
Measure out both mustards, chicken broth, honey and then mix well in a bowl.
Add into the crockpot the chicken, and the honey mustard mixture. Give this a good stir.
Let this cook for about 4 to 5 hours on high or 6 to 8 on low.
    Plate over Jasmine rice

Notes

If the sauce is not thick enough add in a cornstarch slurry to thicken the sauce.  Cook for another 15 minutes.
if you would like this to be sweeter just add in more of the honey.

The only thing missing was a vegetable but the second night we did have broccoli with it.
