Here are some lunch ideas you can do for you and your family. This week I made lunches for me and my husband. There was four of each for us. This is a test trail to see how easy it is to make lunches ahead for us for the work week.
We each got 2 taco salads, as well as 2 each of Buffalo chicken salad.
For the taco salad
2 lb. ground beef (you can sub for turkey)
2 packs of taco seasoning
1 ½ cups water per the taco pack
Cherry tomatoes
Chopped lettuce
1 can black beans
1 can of corn
I cooked the meat until no longer pink and drained any fat off and then added the taco seasoning packs and water and cooked for 20 more minutes.
*note: I put the Lettuce, tomatoes and cheese in a baggie. So when warming these are not included.*
For the buffalo chicken salad
1 package of chicken tenders
1 cup of hot sauce (your choice)
1 cups of chicken stock
1 can black beans
1 can corn
2 boil in bags rice
I cooked the chicken in the crock pot with the hot sauce and stock for about 3 hours on high, and then I just shredded it.
For assembling each I just layered as I thought was best. The buffalo chicken I put the rice on the bottom and then beans, corn and chicken. Then add the Avocado when ready to eat.
