Chicken Stir Fry (Is What’s For Dinner)

Hi guys, this is one of many of my go to easy meals.  All it takes it about 30 minutes to make which is great for when I come home from work and want to fix some quick and delicious meal.   The recipe is listed below and is also found under my Main Dishes menu.  We make this in several variations depending what I have on hand, but it is always delicious.

Ingredients:

1 lb boneless chicken cut into strips

1 cup of fresh pea pods

¼ cup of carrots thinly sliced

1 cup bean sprouts

½ cup soy sauce (or to taste)

2 tsp sesame seed oil

Steps:

Marinade the chicken with 1 table-spoon sesame oil and 1 table-spoon of soy sauce.  Let marinade for about 30 minutes to 1 hour if time permits.

Set seasoning packs aside from the Ramen soup.  You want to cook the Ramen soup noodles per the package directions, maybe slightly under.

In a large wok or skillet add about 1 tbsp of sesame oil, stir fry the chicken for 5 to 7 minutes until no longer pink and cook through.  Then add in the vegetables and stir fry those for 3 to 4 minutes, but still have crispness to them.

Drain the noodles and then add them to the stir fry along with the seasoning packs, soy sauce, and sesame seed oil.   Stir all ingredients until well mixed, and then serve.

Serves 4 to 5
