Baked Bacon Cheese Burger and Potato Casserole

Hi guys, I have a new recipe that you need to try.  This is an easy and inexpensive recipe as well.  You can purchase all of the ingredients at Aldi if you shop there.  This is also something that can be made when you get home from work.  That is how easy this recipe is.

2 lb. Ground beef (or turkey)

1 medium Onion finely chopped

2 tsp Minced garlic

Salt and pepper to taste

1 ½ tsp Grill seasoning for burgers

1 lb. of Bacon

4 medium Potatoes

1 ½ cups Cheddar cheese



Cut the bacon into pieces and cook in a medium pan.  Once bacon is cooked remove with a slotted spoon and place on a paper towel.


Using the same pan with the bacon droppings add in the ground beef to the pan.  Then add in the onion, garlic, salt and pepper along with the burger seasoning.  Cook beef until no longer pink.  Drain any access fat from beef.

While beef is cooking peel and slice potatoes into ½ inch thickness.  (I used a Madeline)


Pre-heat oven 375 degrees.  Using a 9×13 inch baking dish layer the bottom with potatoes and then beef and cheese.  Repeat the layers until all ingredients are used.

Bake for 30 minuets covered with tin foil then after 30 minuets remove foil and bake for 15 more minuets until brown.  Make sure the potatoes are done.



Garnish with fresh tomato

Ruthy’s 2 Meat Pasta

Here is a recipe that I created one day with ingredients I had on hand and needed to use.

This is a very easy and inexpensive dish to make.  You can actually get all these ingredients from Aldi if you are on a budget like me.



1 15 oz. can of Hunts meat sauce

2 lbs. ground beef

1 package of Italian sausage

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. Oregano

1-½ cups of mozzarella

1 cup of Parmesan cheese (topping)

Salt and pepper to taste



Cook the ground beef until no longer pink.  About mid way through the cooking put in the onion powder, garlic powder, and oregano and salt, pepper to taste.

Once the ground beef is done drain any access fat from pan and set ground beef aside.

In the same pan cook the Italian sausages removing the casings.  Cook the sausage until done.  Then drain any access fat and add it to the ground beef.

Note:  You can cook both meets together if you prefer.

While meat is cooking you can start a pot of water to begin the pasta.  Once the water is to a boil add the pasta and cook according to pasta directions.

Drain pasta and then put the pasta back into the pot it was cooked in.  Add in both ground beef and Italian sausage and give it a good mix.

Now add in the mozzarella cheese and mix the cheese in well.  This will make the pasta nice and cheesy.

Place the pasta into a medium baking dish or a baking dish that will hold all the pasta and bake in the oven on 350 degrees for about 20 minutes until the cheese is nice and melted.

Serve with Parmesan cheese on top.


Note: You can also freeze this dish using aluminum pans.   I can get two dinners out of this.


Peanut Butter Cookies

This is a recipe that I have shared before.  These cookies are the best ever I had.  I took a few peanut butter cookie recipes and picked out the ingredients that I thought would make the best peanut butter cookie ever and I did.





½ cup shorting                                               1679473A-A79B-4EE4-9AEE-B858B3BFA4DE

1 ½ cup peanut butter

½ cup white sugar

½ cup brown sugar

2 eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt


Preheat oven to 350 degrees F (175 degrees C)

In medium bowl, cream together the shorting, peanut butter, and sugar.  Beat in the eggs one at a time, and then stir in the vanilla. Combine the flour, baking powder and salt.  Slowing stir into peanut butter mixture making sure all ingredients are incorporated.

On cookie sheet drop rounded spoonful of peanut butter mixture

Bake for 8 to 10 minutes in preheated oven.  Cookies will be soft and chewy if not over baked.

Allow cookies to cool on a cooling rack until completely cooled




What’s For Dinner

Here is another go to meal for my family, Lechon with white rice and beans.  It is a great Sunday dinner and there are leftovers for lunches which is great.   You can also freeze the leftover as well.  I tend to make a bigger Lechon just to have it for another day.

The full recipe for the Lechon is under Main Dishes so feel free to check that recipe out.  The rice and beans are also under Main Dishes so if you want to make the full meal like I am sharing.


You can serve the Lechon with what ever side dishes you like.  My family loves it with rice and beans.

You can cook the skin too and make chicharron which is just so delicious.


Cinnamon Sugar Muffins

Hi Guys, Here is a new recipe that I tried and it was awesome.  My family absolutely loved it and want me to make this more.

I found this on Pinterest by a random search and I am happy that I did.  These little things go very well with coffee or tea.  They are not to sweet but just right.



1 1⁄2 cup all-purpose flour
1⁄2 cup white sugar
1 1⁄2 tsp baking powder
1⁄4 tsp ground nutmeg
1⁄8 tsp salt
1 egg, lightly beaten
1⁄2 cup milk
1⁄3 cup butter, melted
1⁄4 cup white sugar
1⁄2 tsp ground cinnamon
1⁄3 cup butter, melted


Preheat oven to 350 degrees. Grease muffin cups or line with paper liners.

In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, nutmeg, and salt. Make a well in the center of the mixture. Stir together egg, milk and 1/3 cup melted butter. Add egg mixture to flour mixture and stir until just moistened (batter may be lumpy). Spoon batter into prepared muffin cups.

Bake for 20 to 25 minutes. Meanwhile, combine 1/4 cup sugar with cinnamon in a small bowl. When the muffins are done, dip the tops in remaining 1/3 cup melted butter, then in cinnamon sugar mixture. Serve warm.
