Fun Cup Cakes

Hi Guys, I wanted to share this fun cup cake recipe I did for my family.  It is super easy and I know the kiddies would love this.   You can also have them help make these that is how easy this is.

The recipe is below I hope you give these a try.

Ingredients:

I box yellow cake mix (along with the ingredients for it)

1 package of sprinkles (of your choice)

Steps:

Make the cake mix according to package directions.

Place muffin liners in each of the muffin wholes of the baking pan.

Mix in the sprinkles into the cake mix until well incorporated.

Fill each muffin a little less than half way.

Bake according to cake mix directions.

Let cool and enjoy.

Salsa (Home Made)

Hi Guys, here is an easy recipe for making salsa.   I have had lots a salsa from jars, restaurants and this is by far the best.  There is nothing like having something home-made.  This recipe took less than 15 minutes to make.

This would be great for when you are looking for that late night snack or when you have friends stopping by and want to make something that is good and easy.

Ingredients:

1 big can of whole tomatoes

1 tsp salt

1/3 tsp sugar

1 medium onion chopped

1 bunch of cilantro

1 jalapeño

Juice of 1 lime

3 garlic cloves

Steps:

Using a food processor add in chopped onion and the garlic cloves.  Then add in the jalapeño with seeds removed.  Note:  When working with the jalapeño use plastic gloves.   Process these n the food processor until finely chopped.

Add in the cilantro a hand full at a time, and then both cans of tomatoes, sugar and salt.  Process in food processor until all chunks are in small pieces.

Then add in the lime juice and mix again.

Pour into an air tight container and store in fridge.

Plan With Me May 28th – Jun 3rd

Hi Guys, here are my planner layout for this week.  I can’t believe that May is almost over.  Wow time is going by so fast.

Here is my Classic Happy planner and I used a kit from SG Stationery on Etsy.  The shop link is below.  It is very Yellow I know but that is my favorite color.

For my Mini Happy planner I used left over pieces from kits I had previously used.  I am trying to use up all my leftover kits so I am not wasting them.   I think it came out cute.

Parmesan Baked Pork Chops

Hi Guys, Another amazing recipe for you to try.  This is simple and amazingly good.  Just a few ingredients is all you need.  For those of you on a budget, all of these listed ingredients below can be found at your local Aldi.  I hope you try and enjoy this recipe.

These pork chops came out so crunchy and I didn’t have to fry them.

Ingredients:

4 bone in or boneless pork chops

1 cup parmesan cheese

1 ½ cup panko

½ tsp garlic powder

½ tsp onion powder

Salt and pepper to taste

Steps:

Pre-heat oven at 350 degree

Using a zip lock back put the pork chops in the bag and then add in the listed seasoning and coat the chops well.  Let the chops marinade for at least one hour or overnight if you can.

Prepare a baking sheet with aluminum and spray with cooking spray so chops don’t stick.

Place the panko and parmesan cheese in a dish so you can begin to coat the pork chops.

Take each pork chop and dredge it into the panko parmesan cheese coating and shake off any access. Place on aluminum lined baking sheet. Continue process until all the pork chops are coated.

Place the baking sheet with pork chops into the oven and let cook for about 30 to 45 minutes depending on your oven.

When pork chops are done remove from oven and serve with a side.

 

 

Chicken Stir Fry (Is What’s For Dinner)

Hi guys, this is one of many of my go to easy meals.  All it takes it about 30 minutes to make which is great for when I come home from work and want to fix some quick and delicious meal.   The recipe is listed below and is also found under my Main Dishes menu.  We make this in several variations depending what I have on hand, but it is always delicious.

Ingredients:

1 package chicken flavored Ramen Noodles

1 lb boneless chicken cut into strips

1 cup of fresh pea pods

¼ cup of carrots thinly sliced

1 cup bean sprouts

½ cup soy sauce (or to taste)

2 tsp sesame seed oil

1 cup broccoli

Steps:

Marinade the chicken with 1 table-spoon sesame oil and 1 table-spoon of soy sauce.  Let marinade for about 30 minutes to 1 hour if time permits.

Set seasoning packs aside from the Ramen soup.  You want to cook the Ramen soup noodles per the package directions, maybe slightly under.

In a large wok or skillet add about 1 tbsp of sesame oil, stir fry the chicken for 5 to 7 minutes until no longer pink and cook through.  Then add in the vegetables and stir fry those for 3 to 4 minutes, but still have crispness to them.

Drain the noodles and then add them to the stir fry along with the seasoning packs, soy sauce, and sesame seed oil.   Stir all ingredients until well mixed, and then serve.

Serves 4 to 5

Cinnamon Sugar Bites (Just 4 Ingredients)

Here is another quick and easy dessert to make that the kids would love.   When you are on a budget this would be a fun and inexpensive dessert.  These are also great for when you are on the go and need to grab something quick to eat.

Ingredients:

½ cup white Sugar

1 tsp Cinnamon

1/3 cup Butter

1 can of Ready-made biscuits

Steps:

Preheat oven 350 degrees

Open can of biscuits and cut each biscuits into quarters.

Melt butter in microwave safe bowl, and set aside.

Using another bowl put the sugar and cinnamon in and mix them until blended.

Take the cut biscuits and dip them into the butter and then dip them into the cinnamon sugar mix and coat well.

Put these on a non-stick cooking sheet and bake for about 10 to 15 minutes.

Chocolate Chip Day

Today is chocolate Chip day and I am sharing my recipe for Chocolate Chip Cookies.  These are so amazingly good and fun to make.

I found this recipe from a cookie book by Sweet Maria’s and this is the best Chocolate Chip Cookie I have had.

Ingredients

½ pound butter, softened

¾ cup sugar

¾ cup brown sugar

2 eggs

2 1/4 cups flour

1 teaspoon baking soda

½ teaspoon salt

2 1/2 cups chocolate chips

1 cup walnuts coarsely chopped (optional)

Steps:

  1. Preheat oven to 350 degrees F
  2. In an electric mixer, on medium speed, cream the butter, sugar, and brown sugar until light.Add vanilla, and eggs.  Mix until well blended.
  3. On low-speed, add flour, baking soda, and salt. Mix just until blended.
  4. Stir In chocolate chips and nuts
  5. Drop dough from a teaspoon onto a parchment-lined cookie sheet, spacing cookies 2 inches apart.
  6. Bake 10 to 12 minutes or until lightly browned.
  7. Remove cookies sheet from the oven. Using a metal spatula, remove cookies from the cookie sheet and place on a wire cooling rack.  Cool on wire racks.  Store cookies in an airtight container.
