Egg White Muffins

Hi Guys, here is another easy recipe for you.  We have made some egg muffins just using egg whites.  We are always on the go at my house and breakfast is the last thing we think about, so here is a recipe for all of you who don’t have the time to eat a good breakfast.

Ingredients:

2 green peppers

½ of an onion                                            2558BC1F-F7F4-49AC-8C48-900948364806

1 tsp. of mince garlic

1/4 tsp.  of black pepper

4-5 slices of bacon

1 small carton of egg whites

Steps:

Pre-heat oven 350 degrees

Spray each cupcake tin with cooking spray.

Dice green peppers and the half of onion.

In a non-stick pan, put a teaspoon of olive oil and let the pan pre heat for 2 mins. Then dump vegetables into the pan and sauté them for about 3 to 4 minutes or until onions start to turn translucent.

Then add the garlic and continue to cook for another minute or so.  Turn off heat and let the vegetables cool down.

Then cook the bacon until crispy. Place bacon on paper towel to cool and pat dry using another paper towel to remove access grease.  Then chop bacon into pieces.

Place about 2 tablespoons of the vegetables in each of the greased cupcake tin.

Then sprinkle the chopped bacon  into each cup.

Pour the egg whites over the bacon and vegetables about halfway up in each cup.

Bake for 15-17 minutes
