Merry Christmas


Chocolate Chocolate Peppermint Cookies

Hi Guys here is another cookie recipe that I want to share with you.  The original recipe had called for chocolate chips, but being the Christmas season we used peppermint and this cookies came out amazing.

I am using my favorite cookie recipe book “The Cookie Jar” for this recipe.  I do recommend purchasing this book.  From all the cookie recipes we have tried none has been a fail.




2 1/2 sticks of butter, softened

1 1/2 cups sugar

2 eggs

2 cups flour

3/4 cup cocoa

1/2 tsp baking soda

1/2 tsp salt

2 cups peppermint pieces (this came in a bag)


Preheat oven 350 degrees

In an electric mixer, cream butter and sugar until light.  Add eggs. Mix well. On low-speed, add flour, cocoa, baking soda, and salt.  Mix just until blended.

Stir in the peppermint chips

Drop from a teaspoon onto a parchment – lined cookie sheet, spacing each 2 inches apart.

Bake 12 to 15 minutes, or until firm.  Remove cookie sheet from oven.  Cool cookies completely on parchment paper.  Store in an airtight container.

Oatmeal Raisin Cookies

Hi guys, here is an oldie but goodie.  This cookie recipe is one of my family favorites especially my husband.  When I make these they don’t last that long.

These are great for on the go morning breakfast.  When my I have these in the house these are always going something I grab for a quick breakfast in the morning before work.  They are great with a cup of coffee.   I hope you try and enjoy.



½ pound butter, softened

1 cup brown sugar

½ cup sugar

1 teaspoon vanilla extract

2 eggs

1 ½ cups flour

½ teaspoon salt

1 teaspoon baking powder

2 cups oats

1 cup raisins


  1. Preheat oven to 350 degrees F
  2. In an electric mixer; cream butter, brown sugar, and sugar until light.Add vanilla and eggs.  Mix until well blended.  On low-speed, add flour, salt, and baking powder.  Add oats and raisins.  Mix just until blended.
  3. Drop cookies from a teaspoon onto a parchment-lined cookie sheet, spacing each 2 inches apart.
  4. Bake 12 to 15 minutes or until lightly browned.
  5. Remove cookie sheet from the oven.Using a metal spatula, remove cookies from the cookie sheet and place on a wire cooling rack.  Cool completely.  Store cookies in an airtight container.

No Bake Chocolate Peanut Butter Crunch Cookie

Hi guys, here is another cookie recipe that you are going to just love.  This recipe there is no baking required now that is awesome.

I found this on Pinterest at “” and this is going to blow you away.  There are just a few ingredients to make this cookie and it is super easy.  If you like chocolate and peanut butter then this recipe is for you.  I hope you try and enjoy.



5 cups Crispy Rice Cereal

1 1/2 cups Chocolate Chips

1 cup Peanut Butter can use any nut or seed butter

1/4 cup coconut oil

1/2 cup pure maple syrup


1.     Line a large baking tray with parchment paper and set aside.

2.     In a large mixing bowl, add your crispy rice cereal and set aside.

3.     In a microwave safe bowl or stove top, combine your chocolate chips, peanut butter, maple syrup and coconut oil. Melt until fully combined If you use a microwave, melt on medium power in 30-second spurts to avoid over-heating.

4.     Pour liquid mixture over the crispy rice cereal and mix until fully incorporated. Using a large spoon or cookie scoop, drop crunch cookie batter on the lined baking sheet, about 2-3 inches apart. Press each cookie and refrigerate until firm.



Chocolate Chip Cookies

Hi guys, it is that time of year for baking up some cookies, and I have this great Chocolate Chip cookie recipe that I want to share with you. once more.  This is my family go to cookie recipe that we bake each year around this time.

I got this recipe from a cookie book by Sweet Maria’s and it is an awesome cookie book.  I hope you try and enjoy.




½ pound butter, softened

¾ cup sugar

¾ cup brown sugar

1 teaspoon vanilla extract

2 eggs

2 1/4 cups flour

1 teaspoon baking soda

½ teaspoon salt

2 1/2 cups chocolate chips

1 cup walnuts coarsely chopped (optional)



  1. Preheat oven to 350 degrees F
  2. In an electric mixer, on medium speed, cream the butter, sugar, and brown sugar until light. Add vanilla, and eggs.  Mix until well blended.
  3. On low speed, add flour, baking soda, and salt. Mix just until blended.
  4. Stir In chocolate chips and nuts
  5. Drop dough from a teaspoon onto a parchment-lined cookie sheet, spacing cookies 2 inches apart.
  6. Bake 10 to 12 minutes or until lightly browned.
  7. Remove cookies sheet from the oven. Using a metal spatula, remove cookies from the cookie sheet and place on a wire cooling rack.  Cool on wire racks.  Store cookies in an airtight container.

Lemon Pie

Hi Guys, this recipe is something that everyone can make with just a few ingredients.  I wanted something for dessert but didn’t want to do a lot of baking.

This is a quick, easy and inexpensive dessert to make that the family will enjoy and love.



1 box Jello lemon flavored mix

1 cup hot water

1 cup cold water

1 tub of cool whip

1 ready-made pie crust

zest of 1 lemon


Make the Jello using the 1 cup hot water and let the Jello mix dissolve.  Then add in the 1 cup of cold water and mix well.

Let the Jello chill in fridge for a few hours then add in the cool whip and lemon zest and stir that in until well mixed.

Put back in fridge and let the Jello mix set for a few hours.  Once set put the Lemon filling mix into the pie crust and spread evenly.  Cover with plastic wrap and finish the setting process in fridge over night.

Optional: garnish with some lemon zest


Banana Muffins

Hi guys, coming back with this amazing recipe that I found on Pinterest  I needed to find a quick and easy recipe to help me use us my over ripe banana and I found this one.

If you love the smell and taste of bananas then this is differently the recipe for you.  My family just loved this recipe in fact the muffins didn’t even cool before my family was taking the muffins to try.   I hope you try this recipe and head over to the and check out her recipes.



1 1/2 cups of flour

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

3 very ripe bananas mashed (you can just use a fork to mash)

3/4 cup granulated sugar

1 egg

1/3 cup melted butter

1/2 tsp. vanilla



Preheat your oven to 350ºF.

Line your muffin baking tin with paper baking cup or lightly grease your muffin tin.

In a bowl, mix together the flour, baking powder, baking soda and salt

In another larger bowl, mix together the mashed bananas, sugar, egg, melted butter, and vanilla.

Then mix in dry ingredients in the wet ingredients bowl and mix well.

Scoop your muffin batter into your muffin cups using a 1/4 measuring cup

Bake for 20-25 minutes.

Use a toothpick to insert into center of muffin is will come out clean when done.  Muffins will also turn a golden brown on top.

Place the muffins on a cooling rack
