Tortellini Salad Easy Lunch Idea

Hi guys, I am always trying to find new ideas for my lunches for work.  If you are like me I get tired of the same boring sandwich everyday.  This is something that is quick and easy to make and I did purchase all ingredients from Aldi which saves me money.

Now the amounts that I used for this salad you can for sure modify to your liking.  Not everyone’s taste is the same, but this is a base for whatever you want to create.

Ingredients

1 package of tortellini 3 cheese (or your choice)

1/4 cup chopped black olives

10 slices of pepperoni chopped

4 slices of hard salami chopped

1/4 cup feta cheese

3 tbsp. Italian dressing

Steps:

Cook the tortellini per package directions.  Once done remove from stove and drain water then run cold water over the tortellini so they will stop cooking and cool down.

Have all these ingredients chopped and ready to mix black olives, hard salami, pepperoni set aside.

In airtight container add in the tortellini and rest of the ingredients and give it a good stir.   Then store in fridge until ready to eat.

Note: if salad is dry the next day just add 1/4 teaspoon of Italian dressing to add moisture back.
