Cheesy Beef and Noodles

This is a great easy dinner for after work so give this a try and let me know what you think.

 

Ingredients

1 lb. lean ground beef

1 medium size onion, diced

2 garlic cloves, minced

1/2 teaspoon fresh ground pepper

1 teaspoon garlic powder

1 cup can milk

2 1/2 cups chicken stock (or broth)

2 cups Penne or Cavatappi ( or noodle of your choice)

1 cup shredded smoked cheddar

1 cup shredded sharp cheddar

Salt and pepper to taste

 

Steps:

In a large skillet over med-high heat, brown the ground beef and half way through cooking add in the diced onion and fresh garlic.  Cook until beef is longer pink.

Drain any access fat from meat and return to pan.

Stir in the salt, pepper and garlic powder and stir well.

Add in the can milk, chicken stock and macaroni. Stir mixture and bring to a boil. Once it is boiling lower heat to low and let it simmer for about 10 to 15 minutes or until the noodles are tender.

Turn heat off and slowly stir in the cheese until all the cheese is incorporated and melted.

Serve when done

Hamburger Soup

Ingredients:

2 lbs. ground beef

1-cup carrots chopped

1-cup celery chopped

1 medium size onion chopped

1 small can tomato paste

1-cup beef broth

4 cups water

4 bouillon cubes (beef or chicken)

1 8oz can tomato sauce

1 tsp. fresh minced garlic

½ tsp. onion powder

½ tsp. garlic powder

2 potatoes chopped

Salt and pepper to taste

Steps:

Cook the ground beef until no longer pink and drain any access fat from meat. Set aside until needed.

In a Dutch oven pot on a medium heat, add about 1 teaspoon oil and let it get hot.  Then add in the carrots, onions, celery and cook until for 3 to 4 minutes.

Add in the ground beef, minced garlic, and tomato paste and mix well. Then add in the beef broth, water, and bouillon cubes and stir until all combined.

Add in the seasonings, tomato sauce, and water and stir until all is combined.

Bring to a boil and then lower heat to medium low and let the soup cook for about 30 minutes or until vegetables are tender.

Note: you can pre-cook the ground beef and freeze until ready to make the soup.  You can also do the same for the vegetables or just use frozen pre-cut vegetables.

Breakfast and Lunches for the Week

Hi guys I wanted to share how I prep for the week for work.  I also bring my lunch because it’s cheaper than buying it from work.
This weeks breakfast and lunches were simple to do and tasty.  I also have a video for this as well on my channel Ruthycancook so go check it out and subscribe while you’re there.

I used chicken sausage with feta and spinach along with white rice and cauliflower.

 

Beef Tostadas

Hi guys, this is a recipe that I have posted before but now there is a video up on my channel Ruthycancook for it, so check check it out and while you are there hit that subscribe button.

This is a great and easy dinner that is very interchangeable with its ingredients.   You can change out the ground beef and use turkey or chicken.  You can also leave the meat out and make it vegetarian.   This is also an inexpensive meal to make and your bucks stretches if you are feeding a family of 4 or more.

 

Ingredients:

2 lbs. ground beef

1 package of tostada shells

2 packs of sazon

1 ½ tsp. adobo

1 ½ tsp. garlic powder

1 ½ tsp. onion powder

3 to 4 tbsp. safrito

Salt and pepper to taste

1 can or homemade refried beans

1 to 2 cups of cheese (I used Chihuahua cheese)

Steps:

In a medium sauce pan cook the ground beef and about half way through the cooking process add in all of the seasonings and stir to they are incorporated.  Finish cooking the beef until no longer pink.  Drain any access fat off the meat and put back into pan.

If using can refried bean heat them in a pot until warmed through.  If you want homemade refried bean check out my recipe on that.

Assemble the tostada as follows – layer of refried beans, then the ground beef, cheese, lettuce, tomato and sour cream, and avocado.

 

Home Made Refried Beans

Hi Guys, I know I have posted this recipe before, but now I have made a video for this and it up on my channel.  This is such a great easy recipe for refried beans that I know you will love.  Check out my video on my channel Ruthycancook and while you are there hit that subscribe button.  I hope you like and let and let me know if you try this.

 

 

1 tsp. minced garlic

2 cups of pinto beans (or 15.5 oz. if using a can)

½ – 1 tsp. cumin

½ – 1 tsp. onion powder

¼ cup chicken stock

Salt to taste

 

If using homemade bean put them in a pot and add in the stock.  If using a can of pinto bean drain and rinse the beans then put them in a pot.

Put heat on medium low and add in the stock stir and mix well.

Then add in the garlic, cumin, onion powder and salt to taste.  Stir the bean to make sure all the seasonings are incorporated.

Using an emulsion hand blender or you can put in a blender puree until beans are smooth, or you can leave some bean whole.

Give the bean a taste to make sure it has enough seasonings and then remove from heat and serve.

Home Made Salsa

This is an great and easy recipe for home made salsa and its great for any occasion.

 

1 big can of whole tomatoes

1 15 oz. can of diced tomatoes

1 tsp salt

1/3 tsp sugar

1 medium onion chopped

1 bunch of cilantro

1 jalapeño

Juice of 1 lime

3 to 4 garlic cloves

 

Using a food processor add in chopped onion and the garlic cloves.  Then add in the jalapeño with seeds removed.  Note:  When working with the jalapeño use plastic gloves.   Chop these up in the food processor until finely chopped.

Add in the cilantro, both cans of tomatoes, sugar and salt.  Chop until all chunks are in small pieces.

Then add in the lime juice and mix again.

Pour into an air tight container and store

Home Made Guacamole

Hi guys, this is an easy recipe that I know you have seen a lot but I have never made this one before, so I am now making and sharing with you.  This recipe for guacamole is great for snacking with chips, adding to tacos, tostadas and more.

 

This is so much better than store bought and I know the ingredients that was put into it.  For this recipe I made just enough to last a few days, because as you know guacamole turns brown quickly due to exposure to air.  So when making this fresh I would only make enough for a few days as not to waste it.  I also have a video up on my YouTube channel Ruthycancook showing how I put this together so head over there and subscribe as well.

Ingredients:

4 ripe avocados
1 medium size onion
2 tbsp fresh cilantro
1 lime juiced
2 Roma tomatoes
Salt to taste

Steps:
Dice the tomatoes and remove the seed set aside. Then dice the onion and set aside.
Chop cilantro and set aside.
In a bowl put in the avocados and using a fork or masher begin mashing the avocados.  If you like chunky don’t over mash.
Then add in the other ingredients and give it a good mix.  Taste for salt and add in 1 or 2 of the avocado seeds and put in fridge in an airtight container.

Note: The avocado seeds with help with it not browning so quickly.
