Grandma’s Icing

This is a recipe that I made recently and wanted to share with you guys.  I got this from my mother-in-law and it didn’t have all the measurements but I think I came close.  This is a sweet icing but paired with a white cake this works great.

I made the icing a little thinner so that it would drip down all sides which left a mess on the plate.   This is a delicious cake and my husband couldn’t wait to take a piece.




2 sticks of butter

2 lbs. confectioners’ sugar

3 tbsp. of Can milk

½ tsp Vanilla



Put the butter in a pan and brown but careful not to burn it.   Take off heat and let the butter cool.

Put the confectioners’ sugar in a bowl and slowly pour in the butter. Mix until well incorporated.

Add in the milk one tablespoon at a time until you get the consistency you want.

Add in the vanilla for flavoring.

Spread the frosting on each layer and then on top and sides.

Use a white cake for best results.


The cake was just a box.  I didn’t feel like doing the cake from scratch this time.

This is some left over from a collaboration that was done over last summer with the Plan With Design Group.   I wanted to finish this kit up and it looks pretty good.  Some unevenness but that is ok.


National Chocolate Cake Day

Today is National Chocolate Cake day.

I am making my chocolate cake with peanut butter filling that I shared with you a few months ago. This is the best chocolate cake I have ever had. I can hardly wait to sink my teeth into this.

I have provided the recipe below and hope you make this amazing chocolate cake to celebrate today.



Peanut Butter Frosting

Serves 12

Light and fluffy peanut butter flavored buttercream frosting.



  • 1 stick butter (room temperature)
  • 1/2 cup creamy peanut butter
  • 1/2 tsp vanilla
  • 2 1/2 cups powdered sugar
  • 1 to 3 tbsp. milk


  1. Beat butter and vanilla until fluffy.
  2. Add peanut butter and mix well.
  3. Add powdered sugar and milk and mix until desired consistency is reached.


Chocolate Ganache

12 oz. of chocolate chips

1 cup of heavy cream or coconut milk

Steps for Ganache

Using a double boiler heat the milk or cream until it comes to a slight boil. Turn off the heat and then add in the chocolate. Keep stirring the chocolate until the chocolate is fully melted. Let the Ganache cool enough to pour over the cake.


Steps to assemble the cake

Once the cakes are cooled layer the top side of the bottom cake with the peanut butter frosting. Then place the second cake on top and pour the ganache over the top of the cake. Then smooth the ganache out evenly over the entire cake.

My Word For This Year 2018

My word for this year is empowerment.


This is my word for 2018. I choose this word because this year I am going to empower myself to be better.

I am going to be better with:

  • The budget
  • Eating right
  • Losing weight
  • Savings
  • Family

These are just some but you get the point. The only way (for me) to get better is to challenge myself with these things. So far the year has started out good and on the right path of empowerment.

Lunches For The Week

Here are some lunch ideas you can do for you and your family. This week I made lunches for me and my husband.  There was four of each for us.  This is a test trail to see how easy it is to make lunches ahead for us for the work week.


We each got 2 taco salads, as well as 2 each of Buffalo chicken salad.

For the taco salad

2 lb. ground beef (you can sub for turkey)

2 packs of taco seasoning

1 ½ cups water per the taco pack

Cherry tomatoes

Chopped lettuce

1 can black beans

1 can of corn

I cooked the meat until no longer pink and drained any fat off and then added the taco seasoning packs and water and cooked for 20 more minutes.

*note: I put the Lettuce, tomatoes and cheese in a baggie.  So when warming these are not included.*



For the buffalo chicken salad

1 package of chicken tenders

1 cup of hot sauce (your choice)

1 cups of chicken stock

1 can black beans

1 can corn

2 boil in bags rice

I cooked the chicken in the crock pot with the hot sauce and stock for about 3 hours on high, and then I just shredded it.

For assembling each I just layered as I thought was best. The buffalo chicken I put the rice on the bottom and then beans, corn and chicken. Then add the Avocado when ready to eat.

Spaghetti Squash

Here is a new recipe we tried and really enjoyed.  This was easy, healthy and fun.


1 squash

1 pack of Italian sausage

Parmesan cheese

2 cups of mariana sauce of your choice


Cut the spaghetti squash in half and place on a sheet pan. Put the olive oil and salt and pepper on each half. Place in oven at 350 degree for about 45 minutes to 50 minutes.

Remove from oven and let cool for a few minutes. Remove the seeds and then using a fork to make the spaghetti by loosening meat of the squash.

Once you have all of the spaghetti squash ready, add the sauce, and sausage.

Note: you don’t have to use any meat on this.
