Hi Guys I wanted to share this cookie recipe our family made over the holiday season. The original recipe calls for chocolate chips, but being the Christmas season we used peppermint and this cookie was amazing.
I am using my favorite cookie recipe book “The Cookie Jar” for this recipe. I do recommend purchasing this book. From all the cookie recipes we have tried none has been a fail.
2 1/2 sticks of butter, softened
1 1/2 cups sugar
2 eggs
2 cups flour
3/4 cup cocoa
1/2 tsp baking soda
1/2 tsp salt
2 cups peppermint pieces (this came in a bag)
Preheat oven 350 degrees
In an electric mixer, cream butter and sugar until light. Add eggs. Mix well. On low-speed, add flour, cocoa, baking soda, and salt. Mix just until blended.
Stir in the peppermint chips
Drop from a teaspoon onto a parchment – lined cookie sheet, spacing each 2 inches apart.
Bake 12 to 15 minutes, or until firm. Remove cookie sheet from oven. Cool cookies completely on parchment paper. Store in an airtight container.
