I always try to make my lunches and some snacks for my work week. It makes is so much easier when they are pre-made and ready to go, then having to get up in the mornings before work and trying to find something to take for lunch.
This week I made a tortellini salad which is super easy to make. I also make some snacks to have during my long work days. Adding a snack really helps me keep up my energy and not hungry by the end of my work day.
All the ingredients I purchased from Aldi which is another great money-saving store.
There really isn’t any set measurements for this salad is all up to your taste, but I have provided the ingredients I used.
Ingredients:
1 package of cheese tortellini
black olives (handful or to your liking)
10 cherry tomatoes (or to your liking)
pepperoni (to your liking)
salami (to your liking)
green onions (to your liking)
feta cheese (handful)
Olive Gardens dressing (or what ever dressing you like)
Cut up the tomatoes, black olives, pepperoni, green onions and set aside.
Cook the tortellini according to package. Drain and stop the cooking process with running cold water over the tortellini,
once pasta is cool add in the other ingredients and mix well.
Note: you can add in the dressing now or wait to the day of eating the salad.
For the snack I had some turkey sticks, 1 slice of sharp cheddar, and 3 slices of ham rolled and cut in half.
