Italian Sub Dip

Hi Guys, I have another great dip for you to try.  This recipe is something that I created to copy the Italian sub sandwiches we all love.  This is an easy dip to put together and would be great for parties and game nights.

I always have my family try our my recipes before I post them, and this one was another hit.  I had served this with crackers, but it can be with chips, veggies, pita chip etc..  I do have a video on this as well which is posted on my channel Ruthycancook on YouTube, soI hope you head over there and see how I put this all together.




1 8oz cream cheese (room temperature)
1 tbsp banana peppers
1/4 cup minced ham
1/4 cup minced salami
1/4 cup minced pepperoni

1/4 cup sour cream

In a bowl add the cream cheese and using a hand mixer on low speed mix the cream cheese until fluffy.   In food processer add in the ham, salami, and pepperoni and chop all the meats.

Now add the all the ingredients together and stir to combine.
Put in airtight container and store in fridge.

Serve with chips, crackers, or veggies.

Note: if to thick add a couple tablespoons of mayo.




Crockpot Cheesy Chili Dip

Hi guys, I have another quick and easy dip recipe for you.  This one just dump into the crock pot and in a few hours it is done.

This recipe my family loved and it was very easy to make.  I also have a video on my channel for this recipe so go check that out too and subscribe while you are there.

You can serve this with any chip you prefer.



1 8oz cream cheese (room temperature)
1 cup of cheddar cheese
1 can of chili with no beans


In bowl add the cream cheese and using a hand mixer on low speed mix the cream cheese until fluffy.   In crockpot add in the chili and cream cheese that is whipped.  Give a good mix and then add in the cheese and cook on high for 2 hours or until cheese are melted together.
Put in airtight container and store in fridge.

Serve with chips.



French Onion Dip

Hi guys, here is another quick and easy fun recipe for you.  This recipe is great with chips, crackers, veggies, or whatever you want to use for dipping.   I am making a couple more dips that I will be sharing with you this week so be looking for them.

Since sport season is upon us and next the holidays, I thought a few easy and quick dips would make life easier for entertaining.   I also have this on my channel so you can check that out too.  I will leave a link below.   Hope you give this a try and enjoy.

1 package of onion soup mix
1 tsp dried minced onion

½ cup Sour cream

In bowl add the cream cheese and using a hand mixer on low speed mix the cream cheese until fluffy.   Then add in the remaining ingredients and stir to combine.
Put in airtight container and store in fridge.
Serve with chips, crackers, or veggies.


Tuna Casserole

Hi guys, this recipe comes from Campbell’s.  This recipe I had tried some years ago and really enjoyed it and ever since i have been looking for the recipe.   Now that I have found it I wanted to make it and share with you.  There are always different ways to making a recipe and making it your own.

For this recipe I did leave out the peas because I am not a big fan of peas in my tuna casserole.  Other then that I made this recipe per the directions.   The next time I make this I think I will add in some onion and garlic to up this recipe some.

1 can cream of mushroom soup
1 can tuna drained
2 cups chips crushed

Pre heat oven 350 degrees
Empty can of soup into a bowl and mix with milk per the can directions.
Then add in the tuna and flake the tuna while mixing.
Now add in 1 cup of the crushed chips and stir them in.
Pour into baking dish and add the remaining crushed chips on top.
Bake for 20 minutes.


Tortellini Salad Easy Lunch Idea

Hi guys, I am always trying to find new ideas for my lunches for work.  If you are like me I get tired of the same boring sandwich everyday.  This is something that is quick and easy to make and I did purchase all ingredients from Aldi which saves me money.

Now the amounts that I used for this salad you can for sure modify to your liking.  Not everyone’s taste is the same, but this is a base for whatever you want to create.



1 package of tortellini 3 cheese (or your choice)

1/4 cup chopped black olives

10 slices of pepperoni chopped

4 slices of hard salami chopped

1/4 cup feta cheese

3 tbsp. Italian dressing


Cook the tortellini per package directions.  Once done remove from stove and drain water then run cold water over the tortellini so they will stop cooking and cool down.

Have all these ingredients chopped and ready to mix black olives, hard salami, pepperoni set aside.

In airtight container add in the tortellini and rest of the ingredients and give it a good stir.   Then store in fridge until ready to eat.

Note: if salad is dry the next day just add 1/4 teaspoon of Italian dressing to add moisture back.



Strawberry Cobbler

Hi Guys, I just finished making a video on this recipe that I got from Divas Can Cook.  I made and shared this recipe before but, this time making it I didn’t have fresh strawberries only frozen.  I took a chance and used the frozen and this cobbler still came out amazing.

Chicken Guisado – Spanish Stew

Hi guys, I have another great dinner idea for you.   I love cooking spanish food and this recipe is easy and very delicious.  I have added a few twist to my version of this dish, and it is amazing.  I know have a video up on my channel as well for this, so go check it out and hit that subscribe button while you are there.

1 can tomato sauce

3 cups water

1 pk sazon

1 tsp garlic powder

1 tsp onion powder

1 or 2 tbsp green olives

4 tbsp safrito

1 can pinto beans

3 medium potatoes (cut into bit size pieces)

½ tsp dry cilantro

½ tsp oregano

½ tsp parsley

1 tsp adobo

1 pk of chicken tenders (cut into small pieces)

1 tbsp oil

salt and pepper to taste

Seasoning for the Chicken

½ tsp onion powder

½ tsp garlic powder

½ tsp adobo


In a medium pan on med/high heat add in the oil and let it get hot.  Then add in the cut up chicken and then season the chicken with onion powder, garlic powder and adobo.  Let the chicken cook until no longer pink.

Now add in the safrito and stir well into the chicken.  Let this cook for 2 minutes and then add in the tomato sauce and stir well.

Now add in the potatoes, water, pinto beans, and the rest of the seasonings.  Stir all ingredients well and give the sauce a taste for salt.

Let this cook until potatoes are tender.  Taste again for salt or other seasonings.

Serve over rice
