No Bake Gluten Free Peanut Butter Chocolate Crispy Cookie

Hi guys, this recipe is something that I know you are going to love.  These no bake cookies taste just like Reese cups and they are wonderful.

These cookies are so easy to make and takes no time at all.  These are great with milk, coffee or tea.  They are not to sweet but just right.  I do have a video on my channel as well for these so I hope you check that out too so you can see how easy theses no bake cookies are to make.

Ingredients:

5 cups Rice Crispy cereal

1 ½ cups chocolate chips (or your choice)

¼ cup coconut oil

1 cup cream peanut butter

Steps:

In a large mixing bowl add in the rice crispy cereal and set aside.

In a microwave save bowl add in the chocolate chips, coconut oil and peanut butter and microwave for 40 seconds or 1 minute until all is melted.

Then take the melted ingredients and pour over the rice crispy cereal and give it a good mix until the cereal is coated with the chocolate and peanut butter mixture.

On a parchment lined sheet pan take about a table spoon of the cookie mix and place on the sheet pan.  Leaving about 1 inch space between cookies.

Place in fridge or cold place so the cookies and set.  Then they are ready to eat.

Lunches snacks and Breakfast for Dec 2 thru Dec 6

Hi guys, this is something new that I am putting up on my channel now.  It is what I had for my work week of lunches, breakfast and snacks.  I hope this gives you ideas of what you can quickly put together for lunches for work.

For me when I am making my lunches I need something quick and easy to make.  I do my best to have all my lunches, breakfast and snacks put together for the week to make it easier on myself.   I hope you enjoy and let me know what you bring to work.

Crockpot Salsa Chicken

Hi guys, here is a new recipe that I did.  I needed to through something together for dinner and didn’t know what.  When looking in my deep freezer I see my homemade salsa and some chicken so hmm why not.

I add in some extra ingredients to made this dish great and it was.  All I had to do was throw my ingredients into the crockpot and let it do all the work.  Coming home from work and dinner is done is always great for me.  I made some jasmine rice to serve this over and dinner was done.  I hope you give this a try and let me know what you think.

My homemade salsa (down below)

½ tsp. cumin

1 tsp. garlic powder

1 tsp. onion powder

salt and pepper to taste

Steps

Add in salsa along with the cumin, garlic powder, onion powder.  Then add in the chicken and let cook on high for 3 hours or low for 5 hours.

Once the chicken is done shred it and its ready to serve.

Serve over white rice

Homemade Salsa

1 big can of whole tomatoes

1 15 oz. can of diced tomatoes

1 tsp salt

1/3 tsp sugar

1 medium onion chopped

1 bunch of cilantro

1 jalapeño

Juice of 1 lime

3 to 4 garlic cloves

Using a food processor add in chopped onion and the garlic cloves.  Then add in the jalapeño with seeds removed.  Note:  When working with the jalapeño use plastic gloves.   Chop these up in the food processor until finely chopped.

Add in the cilantro, both cans of tomatoes, sugar and salt.  Chop until all chunks are in small pieces.

Then add in the lime juice and mix again.

Pour into an air tight container and store in fridge.

 

Chicken Broccoli with Alfredo Sauce

Hi guys, this recipe was posted some time ago and now I have a video on my channel for it Ruthycancook.  This is always a go to dinner idea for my family and it is so good.

This is easy enough to make after a long day at work.  I try hard to make recipes that I can cook after work that is easy and delicious.  I hope you give this a try and go check out the video on my channel Ruthycancook to see how easy this recipe really is.

 

Ingredients:

3 chicken breast cooked and chopped

1 package of frozen broccoli thawed (or fresh)

1 box of Panne pasta (or your choice)

1 cup of heavy cream

½ to 1-cup Parmesan cheese shredded

1/3 cup butter

salt and pepper to taste

Steps:

Cook the pasta according to package directions, and then drain the pasta and set aside.

In a medium or large pan add in the butter and melt over medium heat.  Then add in the cream and stir.  Then add in the Parmesan cheese and stir until cheese begins to melt.  Once cheese is melted add in the pasta and broccoli and give it a good stir.  Then add in the chicken and mix well.

Top with more Parmesan cheese if desired.

Note: If using frozen broccoli cook for 5 minutes in boiling water.

Chocolate Chip Cookies

Hi guys, this is another recipe that I posted some time ago.  I am sharing this again because I now have a video up on my channel for it.  This like other cookie recipes are my families go to cookies.  I found this recipe in a cookie book from Sweet Marie’s Cookie Jar.  You can find her book on Amazon.

It is a family tradition to make three cookies every year and so far I got two of them done.  You will soon see the last one come out in a week or so.

Oatmeal Rainsin Cookies

Hi guys, these recipe is one that I shared some time ago, but now I have a video on this and wanted to share that with you.

Salsichon Soup or Sopa de Salsichon

Hi guys, this soup recipe is one of my go to soup recipes.  This is so great for when you are not feel well.  One bowl of this soup will surely make you feel better.

This is a Puerto Rican soup that I love making.  I don’t wait for the cold weather to come to make this either, because this soup is great for any season.  I posted this recipe a long time ago and I now finally have a video up on my YouTube channel for it Ruthycancook, so I wanted to share this so you can see how easy this soup is to make.

Ingredients:

1 can tomato sauce

2 cloves of garlic minced

1 can of beef broth
2 med potatoes cut into cubes
½ of a salchichon sausage
1 to 2 tbsp. Sofrito
1 to 2 tbsp. of fresh chopped cilantro
½ tsp. of oil
1 pk of Fideos noodles or angel hair (optional)
2 pk of sazon
½ cup of frozen corn
6 cups of water
salt and pepper to taste
**I don’t add any salt due to the sazon and salchichon already having salt in them**

Steps:

Using a deep sided pot add in the oil and then salchichon.
Then add in the minced garlic, and cilantro. Let simmer for about 5 minutes so flavors and merry.
Next add in the water, beef stock, tomato sauce, safrito, sazon and pepper to taste.
Let cook for about 10 minutes and then add in the potatoes and cook until potatoes are done.
Now added in the corn, and Fideo noodles or angel hair and cook for 5 to 10 minutes until noodles are done.

Top with with some avocado and it is awesome.
