Chicken Italian Meatballs

Hi Guys, here is a recipe that is simple to make and delicious.  This is also a recipe that you can find all the ingredients at Aldi.

These meatballs can go with anything.  You can make a meatball sub, spaghetti and meatballs, or just some meatball with gravy.   I hope you like and try.

Ingredients:

2 lb. ground chicken

½ cup panko breadcrumbs

2 eggs

2 tbsp. parsley

1 cup parmesan cheese

1 tsp Italian seasoning

1 tsp oregano

½ tsp garlic powder

½ onion powder

Salt and pepper to taste

Step:

Pre-heat oven 350 degrees

In a large bowl add the ground chicken, eggs and panko breadcrumbs and mix well.  Then add in the remaining ingredients and mix again until all is combined.

Prepare a baking sheet line with aluminum foil and use cooking spray so the meatballs don’t stick.

Roll meatballs into a 1 inch ball and set on baking sheet.  Continue this step until all of the ground chicken is gone.

Place in the oven and cook for about 25 minutes or until done.

Chicken Cabbage Stir Fry

Hi Guys, I have another easy stir-fry for you.  This is a very favorable dish.  It is also easy to make so this can be a week night meal after work.  My family just love these stir-fry dishes so I try to incorporate them often.

Ingredients:

2 packages chicken flavored Ramen Noodles (with seasoning pack)

2 lb. ground chicken

¼ cup of carrots thinly sliced

1-cup fresh bean sprouts (or a can)

¼ cup soy sauce (or to taste)

2 to 3 tbsp. sesame seed oil

4 cups Napa cabbage

1 cup purple cabbage

4 green onions chopped

1 tsp. minced garlic

Meat Seasoning:

1 tsp. soy

½ sesame seed oil

½ tsp. garlic powder

½ tsp. onion powder

Steps:

Pre-season the ground chicken with a little of soy and sesame oil.

Set seasoning packs aside from the Ramen soup.  You want to cook the Ramen soup noodles per the package directions, maybe slightly under.

In a large Wok or skillet, stir fry the ground chicken until no longer pink.  Remove from Wok and set aside.

Then add in the vegetables and stir-fry those for 4 to 5 minutes, but still have crispness to them.

Add in the ground chicken and give everything a good mix.

Drain the noodles and then add them to the Wok along with the two seasoning packs, soy sauce, and sesame seed oil.   Stir all ingredients until well mixed, and then serve.

Serves 4 to 5

Note:  The purple cabbage will change the color of this dish so don’t be alarmed.

Country Fried Steak

Hi guys, this recipe you are going to love.  This is a comfort food that always goes great with some mashed potatoes and white gravy.

This is not a dish I make often due to the frying, but it is a treat when we do have it.  There isn’t that much work that goes into making this dish, but I normally make this one on the weekends when I have more time to cook.

Ingredients:

4 cube steaks

1 ½ tsp. garlic powder

1 ½ tsp. onion powder

1 tsp. steak seasoning (optional)

salt and pepper to taste

2 eggs (with 2 tbsp. water added)

4 cups flour

1 cup oil for frying

Step:

To set up dredging station you will need to deep dishes for the flour and eggs.  I used two pie pans they always work great for dredging.

Whisk the eggs and water together well.  You want the egg to be on the thinner side for dredging.

Add half of the seasoning to the flour and mix that well so the seasonings are incorporated into the flour.

Use the remaining seasoning for the cube steak and let the steak sit for about 15 minutes with the seasoning on.

Take the cube steak and put it into the egg and shake off any access and then put into the flour. Coat with the flour well and shake off any access as well.  Place on a baking sheet and continue coating the remainder of the steaks.

In a cast iron skillet heat the oil until hot.   Once oil is hot add in one steak at a time not over crowding the pan.  Let the steak cook for about 2 to 3 minutes on each side until golden brown.

Remove from oil and place on a wire rack with paper towels under it to catch any oil drippings.

Note:  if cube steak is to thick use a mallet pounding the steak out the desired thickness.

 

Easy Lunch Wraps

Hi Guys, I have another great idea for lunches.  This is something that is quick and easy to make in the mornings before work or anytime.  I am always looking for new ideas for lunches so that my husband and I can have different and tasty things to eat.

Now for me it is all about the wrap that is used.  I tried several wraps and none that I really cared to eat.  I came across this wrap that I didn’t try yet so that is why this lunch idea came to be.   I am using the Mission’s brand this time and let me tell you I love their wraps.  They are very flavorful and hold up very well.   I used two different wraps from them the Jalapeño Cheddar and the Spinach wrap and both I love.  The Jalapeño wrap has just a little kick to it but it add another element to the wrap and I love that.  The Spinach wrap also gives an added flavor and it is not overwhelming with spinach flavor which is great to me.   Below is what I did for these wraps so I hope you enjoy and give them a try.

Ingredients:

2 slices of deli turkey meat

2 slices of deli roast beef

2 slices of deli ham meat

½ tsp mayo

½ tsp. mustard

Lettuce

Tomato

Salt and pepper to taste

Jalapeno cheddar and Spinach wrap (I used Mission’s brand)

 

Steps:

In a small bowl mix the mayo and mustard together and set aside.

Place wrap flat on counter and spread some of the mayo mustard spread on the wrap.

Then add the lettuce and tomato next.   Now start placing the deli meat down on top of the tomato until gone.

Rolling the wrap from side that is nearest you and folding in the side as you roll.  Do this until the wrap is completely rolled up.

Cut in half and serve with chips, salad or soup.

Coffee for Coffee Day

Hi Guys, this has to be one of my favorites days.  Today is coffee day and I love coffee.  The smell and flavor are just so amazing in the house.

This is a repost from some months back, but being that today is coffee day I have to share this again.  I hope you try and enjoy my recipe.

This is enough coffee for a few days which made it very easy for me in the morning before work.  Just pour and go.

Coffee Coco Goodness

Ingredients:

6 cups coffee

3 tbsp. sugar

1 tbsp.  Coco powder

1 large banana

½ cup coconut milk

 

This is made in a batch so I don’t have to make coffee for a couple of days.  You can reduce the measurements to make it a signal cup.

Brew the coffee in coffee pot and once done add in the sugar and coconut milk.  Let the coffee cool for a few minutes.  I put mine in the fridge for about 15 minutes.

Once coffee is cool enough to work with, add about half to blender, then the banana, coco and blend until well incorporated.  Repeat the step until all the coffee has been blended.

Serve over ice and enjoy.

Pancakes for Pancake Day

Hi Guys, here is a recipes that I shared before and sharing again.  Today’s is Pancake day and what better way to celebrate the day then with some easy delicious pancakes.   This recipe come from Foodwishes.com and it is truly a good recipe.

Ingredients:

    • 1 1/2 cups all-purpose flour
  • 
3 1/2 teaspoons baking powder
  • 
1 teaspoon salt
  • 
1 tablespoon white sugar
  • 
3 tablespoons butter, melted
  • 
1 egg
  • 1 1/4 cups milk 
 

Directions

Sift together flour, baking powder, salt, and sugar in a large bowl.

Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.

Preheat a large skillet over medium-high heat. Spray with cooking spray. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.

Crockpot Chicken and Noodles

Hi Guys, here is a recipe that I seen so many of my Youtube friends make that I wanted to try for myself.  This is an easy and very tasty recipe and you should give is a try.  I added in some frozen pea for the color and a veggie.

For me recipes that are in the crock pot are my favorites because that means dinner will be cooking and I can do other things around the house.

Ingredients:

2 to 3 chicken breasts

1 can cream of chicken soup

1 can cream of celery soup

1 tsp. garlic powder

1 tsp. onion powder

2 cups chicken broth

1 cup frozen peas

1 package frozen egg noodles (or fresh if frozen if not found)

Steps:

Add chicken to crock pot and season with the garlic and onion powder.

Then add in both cans of cream soups and broth.   Let this cook for about 3 or 4 hours on high or until chicken can be shredded with a fork.

Then add in the noodles and peas and let this cook for about 1 hour or until noodles are done.

Serve while hot.
