Home Made Refried Beans

Hi Guys, I know I have posted this recipe before, but now I have made a video for this and it up on my channel.  This is such a great easy recipe for refried beans that I know you will love.  Check out my video on my channel Ruthycancook and while you are there hit that subscribe button.  I hope you like and let and let me know if you try this.



1 tsp. minced garlic

2 cups of pinto beans (or 15.5 oz. if using a can)

½ – 1 tsp. cumin

½ – 1 tsp. onion powder

¼ cup chicken stock

Salt to taste


If using homemade bean put them in a pot and add in the stock.  If using a can of pinto bean drain and rinse the beans then put them in a pot.

Put heat on medium low and add in the stock stir and mix well.

Then add in the garlic, cumin, onion powder and salt to taste.  Stir the bean to make sure all the seasonings are incorporated.

Using an emulsion hand blender or you can put in a blender puree until beans are smooth, or you can leave some bean whole.

Give the bean a taste to make sure it has enough seasonings and then remove from heat and serve.


Home Made Salsa

This is an great and easy recipe for home made salsa and its great for any occasion.


1 big can of whole tomatoes

1 15 oz. can of diced tomatoes

1 tsp salt

1/3 tsp sugar

1 medium onion chopped

1 bunch of cilantro

1 jalapeño

Juice of 1 lime

3 to 4 garlic cloves


Using a food processor add in chopped onion and the garlic cloves.  Then add in the jalapeño with seeds removed.  Note:  When working with the jalapeño use plastic gloves.   Chop these up in the food processor until finely chopped.

Add in the cilantro, both cans of tomatoes, sugar and salt.  Chop until all chunks are in small pieces.

Then add in the lime juice and mix again.

Pour into an air tight container and store

Home Made Guacamole

Hi guys, this is an easy recipe that I know you have seen a lot but I have never made this one before, so I am now making and sharing with you.  This recipe for guacamole is great for snacking with chips, adding to tacos, tostadas and more.


This is so much better than store bought and I know the ingredients that was put into it.  For this recipe I made just enough to last a few days, because as you know guacamole turns brown quickly due to exposure to air.  So when making this fresh I would only make enough for a few days as not to waste it.  I also have a video up on my YouTube channel Ruthycancook showing how I put this together so head over there and subscribe as well.



4 ripe avocados
1 medium size onion
2 tbsp fresh cilantro
1 lime juiced
2 Roma tomatoes
Salt to taste

Dice the tomatoes and remove the seed set aside. Then dice the onion and set aside.
Chop cilantro and set aside.
In a bowl put in the avocados and using a fork or masher begin mashing the avocados.  If you like chunky don’t over mash.
Then add in the other ingredients and give it a good mix.  Taste for salt and add in 1 or 2 of the avocado seeds and put in fridge in an airtight container.

Note: The avocado seeds with help with it not browning so quickly.



Air Fry Chicken and Cheese Flautas

Hi guys, I know I have posted this recipe before but this time I have a video on it and wanted to that with you.

These flautas are just so good and much healthier now that we are using an air fryer rather than frying them in a lot of oil.  Feel free to check out my video on on my channel Ruthycancook and subscribe while you are there.



1-½ lbs. of meat of your choice (rotisserie chicken, steak, etc.)

1 pk of Corn tortillas

2 cups Cheese of your choice (I normally use a Mexican cheese)

Oil for air fryer 1 tsp. (I use a spray bottle with oil)




Take the cooked meat and try to cut them into strips so they fit the length of tortilla.

Take a tortilla and put the meat, and come cheese inside and then roll the tortilla into a tube. Place toothpicks if needed to hold the Flautas together.

Air fryer: Put them in the air fryer one by one at 380 for about 10 minutes.  Note: Check to make sure they are at the crispness you want.


Chicken seasoning (if not using rotisserie)

Chicken seasonings

1 tbsp. Sazon complete

1 tbsp. Adobo

½ tbsp. Garlic powder

½ tbsp. Onion powder

2 cups of Chicken broth

1 pk of Sazon

3 tbsp. safrito  ( I have a video on this)

Cook in crockpot for 3 hours on high then let cool and shred the chicken.

Note: Spanish seasonings should be found in the Spanish aisle of store.

Chocolate Jello Pudding Pops

Hi guys here is a fun easy recipe that the kids will just love.  No fuse no mess and cheap to make.  You can use any brand pudding you like, and any flavor you would like.

I let these freeze over night so they would be really firm.  They were delicious.    I also have a video up on my channel for this as well Ruthycancook.




1 box of jello chocolate pudding mix
2 cups of milk (per box directions)
In mixing bowl add in the pudding mix and milk and stir until pudding is dissolved.
Then pour into pop molds.
Let freeze overnight.


Arroz and Gondules (red rice with pigeon peas)

Hi guys, this recipe is something that is made in my kitchen a lot.  We love Spanish food and it is easy to make.   Rice is always a good side dish and something even a main dish. this recipe is great for going along side of some Spanish fried pork chops which I have a video up on my channel.  That will be linked below.

4 cups Goya medium grain rice

2 tbsp. oil

1 8 oz can tomato sauce

1 pk sazon

2 tsp. adobo

2 tsp. garlic powder

2 tsp. onion powder

3 tbsp. safrito

1 15oz can gondules (pigeon peas)



Add oil to pot and put heat on medium high heat. Let the oil heat up

Wash the rice until water runs clear or as clear as you can get it and set aside

Once oil is heated add the tomato sauce, sazon, adobo, garlic powder, onion powder, safrito and gondules then stir to combine and let simmer for about 3 to 4 minutes.

Add in the washed rice to pot and stir well.

Add in enough water to just cover the top of the rice.

Let this cook on medium high heat until the water has evaporated from the rice.

When water has evaporated, lower the heat down to low and cover with a lid. Stirring rice occasionally.

Let this cook for about 30 to 45 minutes or until rice is tender.

Serve with bean or just as is.

Eve’s Pasta Sauce

Hi guys, this recipe comes from my youngest daughter Eve.  She put this recipe together using what she had in her pantry and fridge.  Being in college she had become very creative in the kitchen.   As she tells me this recipe was inspired to due low funds and lack of room in fridge.  All of which a college student faces.  She sent this to me and told me I needed to put this on my website, so that is what I am doing.

This recipe did not take many ingredients and was very easy to make.  I am very pleased that my daughter isn’t just eating Ramen soups everyday,.  She is making exciting new recipes that are simple, exciting and delicious.  I hope you give this a try and let me know what you think.  This is very good and mom approved lol.


Ingredients for sauce

1 can of tomato sauce
1 medium onion
1/2 of minced garlic
1/2 cup of water
1 chicken bouillon cube
1 tablespoons of olive oil
1 teaspoon of Italian seasoning

Cook onions until translucent, add garlic and saute for another minute. Add can of tomato sauce. Add the water and bouillon cube. Once the cube is dissolved, add the Italian seasoning and cook for another 2 minutes. Then turn off heat.
